- 3 large eggs
- 241 g crushed pineapple, drained
- 198 g grated carrots

- 57 g shredded unsweetened coconut
- 2 teaspoons vanilla extract
- 298 g King Arthur Unbleached All-Purpose Flour
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- FROSTING
- 85 g butter, at room temperature
- 227 g cream cheese, softened
- 1 teaspoon vanilla extract
- 397 g confectioners' sugar
- 113 g chopped pecans or walnuts, optional
- 92 g mini diced ginger (candied ginger) or 1 teaspoon ground ginger, optional
- 28 to 57 g milk

To make the dough: Heat the milk and butter until very warm
- For the dough:
- 2 3/4 to 3 cups flour
- 3/4 cup milk
- 1/4 cup butter
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 1 tablespoons active dry yeast
- 1 teaspoon maple extract
- 1 egg
- For the streusel:
- 1/4 cup melted butter
- 1/2 cup white sugar
- 1/3 cup chopped pecans
- 1 teaspoon cinnamon
- 1 teaspoon maple extract
- For the glaze:
- 1 cup powdered sugar
- 2 tablespoons melted butter
- 1 to 2 tablespoons milk
- 1/2 teaspoon maple extract
- 1/2 teaspoon vanilla extract
