Lemon Tartlets

Preheat over to 325. Spray 2 mini muffin pans (or pan with 24 cups) with PAM
- Tart Shells:
- makes 24 tartlets
- 1/2 cup butter, softened
- 1/3 cup sugar
- 1 egg white
- 1 1/4 cups flour
- Filling:
- 2 eggs
- 1/3 cup sugar
- 1 Tbs. butter melted & cooled
- 2 tsp. lemon zest
- 3 Tbs. lemon juice
- Powdered sugar
Lemon Crumb Muffins with Lemon Glaze

Directions: Preheat oven to 350°F
- Crumb topping:
- 1/4 C unsalted butter, melted
- 3/4 C all purpose flour
- 2 Tb granulated sugar
- 2 Tb light brown sugar
- Batter:
- 1/4 C unsalted butter, softened
- 1/2 C granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
- zest of 1 lemon
- 2 Tb lemon juice, freshly squeezed
- 1/4 tsp salt
- 1 1/2 tsp baking powder
- 1 C all purpose flour
- 1/2 C sour cream
- Glaze:
- 6 Tb powdered sugar
- 1 Tb lemon juice
BOSTON CREAM PIE CUPCAKES

Preheat the oven to 400, and line four cups in a muffin pan with paper liners
- For the filling:
- 4 tablespoons unsalted butter, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg white, at room temperature
- 2 tablespoons sour cream, at room temperature
- 6 tablespoons flour
- 1/2 teaspoon baking soda
- pinch of fine salt
- 1 batch of pastry cream OR 1 box instant vanilla pudding with 1 1/2 cups cold milk
- For the frosting
- 2 ounces unsweetened chocolate, chopped
- 4 tablespoons unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 tablespoon sour cream
- 1/4 cup cocoa powder
