- 4 cups flour
- 3/4 cup cocoa
- 4-1/2 teaspoons baking powder
- 1/2 teaspoon of each: cinnamon, cloves, nutmeg, salt
- 1-1/2 cup plus 3 tablespoons unsalted butter
- 1-1/4 cups sugar
- 3 lightly beaten eggs
- 1 teaspoon vanilla
- 1 small can frozen orange juice (defrosted)
- 12 ounce package chocolate chips
- 12 ounces chopped walnuts
- 1 cup chopped dates
- 1 cup raisins

- 1 cup (7 ounces) vegetable oil
- 1 cup sugar
- 1 to 2 tsp cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 3 1/2 cups King Arthur Unbleached All-Purpose Flour
- 1 teaspoon baking powder
- 2 cups chocolate chips
- 1 1/2 cups walnut pieces

Grilled Chicken and Summer Squash Salad

Prepare a medium-high gas or charcoal grill fire
- 1 large clove garlic, mashed to a paste with 1/2 tsp. kosher salt
- 3/4 cup canola oil
- 1/4 cup fresh lime juice and 2 tsp. finely grated zest (from 1 lime)
- 1/4 cup chopped fresh cilantro leaves and tender stems
- 1-1/2 Tbs. finely grated peeled fresh ginger
- 1 Tbs. finely chopped jalapeño (seeded if you like; about 1/2 a jalapeño)
- 1 tsp. granulated sugar
- Kosher salt
- 1-1/2 to 1-3/4 lb. mixed summer squash, such as zucchini, yellow zucchini, and yellow squash, sliced 3/4 inch thick on an extreme angle (about 3 medium)
- 1-1/2 lb. boneless, skinless chicken breast halves, pounded to an even thickness
- 5 oz. baby arugula
- Freshly ground black pepper
ZUPPA DI BACCALA – Baccala Soup

Heat oil and add garlic cooking a couple of minutes
- 1 lb Salt Cod – soaked in cold water 24-48 hours – change water several times – at least 4
- 1/4 c. Olive Oil
- 4 Cloves Garlic chopped
- 1 Large Onion sliced
- 1 c. White Wine
- 4 Peeled Potatoes – sliced – I then cut slices in half
- 1 28 oz. can Peeled tomatoes – give one quick turn in the blender – this seems to give the perfect consistency
- 1/2 c. Chopped fresh flat leaf parsley
- 1/4 c. Chopped Fresh basil
- 1 Bay Leaf
- 1/2 tsp. Red Pepper Flakes
- 2 c. water ( you can add more after it gets going if you like more liquid)
- 2 tsp. Kosher Salt
- Freshly ground black pepper to taste
- Chopped Fresh Basil for garnish

Apple Cider Doughnuts

1. Place apple cider in a small saucepan over high heat and reduce to 1/2 cup; remove from heat and reserve
- 1 cup apple cider
- 5 1/2 cups all-purpose flour, more for rolling dough
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon freshly grated nutmeg
- 1 1/2 teaspoons ground cinnamon
- 4 tablespoons unsalted butter, at room temperature
- 1 1/2 cups granulated sugar
- 1/4 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 medium Honeycrisp apple or other tart cooking apple, peeled and cut into 1/4-inch dice
- Vegetable oil, for frying
- Blueberry ginger jam, for serving (see recipe).
