Orecchiette with Mini Chicken Meatballs

Bring a large pot of salted water to a boil over high heat
- 1 pound orecchiette pasta
- 1/4 cup plain bread crumbs
- 1/4 cup chopped fresh flat-leaf parsley
- 2 large eggs, lightly beaten
- 1 tablespoon whole milk
- 1 tablespoon ketchup
- 3/4 cup grated Romano
- 3/4 teaspoon salt
- 3/4 teaspoon freshly ground black pepper
- 1 pound ground chicken
- 1/4 cup olive oil
- 1 1/2 cups low-sodium chicken stock, hot
- 4 cups cherry tomatoes, halved
- 1/2 cup freshly grated Parmesan
- 8 ounces bocconcini mozzarella, halved
- 1/2 cup chopped fresh basil leaves
Confetti Crab Dip

Place cream cheese in a 1 quart casserole
- 2 8 ounce packages cream cheese
- 3/4 pound fresh crabmeat, drained and flaked
- 1/4 c. minced green onion
- 3 T. mayonnaise
- 2 T. sour cream
- 1/4 tsp. salt
- 1/4 tsp. dry mustard
- 1/8 tsp. garlic powder
- 1/8 tsp. red pepper flakes
- 1 2 ounce jar diced pimiento drained
- 1 T. sauterne
- 1 T. chopped fresh chives
Roasted Chicken Jus

- 6 chicken wings
- 1 large onion, quartered
- 3 medium carrots, roughly chopped
- 2 stalks celery, roughly chopped leaves and all
- 5 sprigs thyme
- 1 head garlic, cut in 1/2
- Kosher salt and freshly ground black pepper
- Extra-virgin olive oil
- 1/4 cup dry white wine
- 2 cups low-sodium chicken broth
- 2 tablespoons cold unsalted butter, cut into cubes

- 1 clove garlic, minced
- Burgers:
- 1 pound ground chicken
- 1/2 teaspoon kosher salt

- 4 sandwich rolls or burger buns

- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard

- 1 1/2 pounds unpeeled small Yukon Gold potatoes (1 1/2-inch diameter)

- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon minced garlic
- 1 extra-large egg yolk, at room temperature (optional)
- Freshly ground black pepper
- 1/2 cup good olive oil
- 1/4 cup dry white wine
- 3 tablespoons drained capers
- 1 cup thinly sliced scallions (6 to 8 scallions)
- 1/2 cup (1/4-inch) diced celery
- 1/2 cup (1/4-inch) diced red onion
- 1 1/2 pounds cooked lobster meat, 1-inch-diced (Omit lobster great potato salad) tuna good also
- 1 lemon

- 1 c. sugar
- 1 egg yolk
- 2 1/2 c. flour
- 1 tsp. vanilla

- Variation candied cherries instead of pecans

- 2 (3 1/2- to 4-pound) chickens, cut in eighths
- Kosher salt and freshly ground black pepper
- All-purpose flour
- 1/2 cup good olive oil
- 8 whole garlic cloves
- 1 1/2 pounds assorted wild mushrooms, such as porcini and cremini, stems removed and (1 1/2-inch) diced
- 8 sprigs fresh thyme, tied with kitchen string
- 1/4 cup dry sherry
- 1 tablespoon minced garlic (3 cloves)
- 2 cups white wine, such as Pinot Grigio
- 2 cups good chicken stock, preferably homemade
- 3 tablespoons unsalted butter, at room temperature
