Garlic Cheese Bread

Preheat the oven to 375 degrees F
- 3 1/2 cups grated Cheddar
- 3/4 cup grated Monterey Jack
- 1/2 cup grated Parmesan
- 3/4 cup (real) mayonnaise
- 1 1/2 sticks softened butter
- 4 whole green onions (white and light green parts), minced
- 1 dash salt
- Freshly ground black pepper
- 4 cloves garlic, finely minced
- 1 loaf crusty French bread
- 1/2 cup chopped fresh flat-leaf parsley
Tuna and Crab Wraps/Crab and Avocado Wraps

Whisk together the mayonnaise, wasabi and sesame oil in a small bowl, and paint the tortilla wrap with this mixture...
- 1 teaspoon mayonnaise
- 1/2 teaspoon wasabi paste
- 1 or 2 drops sesame oil
- 1 soft flour tortilla wrap
- 1/2 carrot, peeled and cut into matchsticks to give 1/2 cup
- Quarter cucumber, halved lengthways, seeded and cut into matchsticks to give 1/2 cup
- 3 ounces tuna, sliced into 1/16 by 3/4-inch rectangles
- 1/2 cup white crabmeat
- 1 teaspoon mayonnaise
- 1/2 teaspoon wasabi paste
- 1 or 2 drops sesame oil
- 1/2 avocado
- 1/4 cup finely shredded iceberg lettuce
- Squeeze lemon juice
- 1 soft flour tortilla wrap
Roast Loin of Pork with Fennel

Preheat the oven to 425 degrees F
- 2 cloves garlic, minced
- Salt and freshly ground black pepper, plus 1 tablespoon kosher salt
- 1 tablespoon fresh thyme leaves
- 1/4 cup Dijon mustard
- 1 (3-pound) boneless pork loin, trimmed and tied
- 3 small fennel bulbs, tops removed
- 8 carrots, peeled, and thickly sliced diagonally
- 10 small potatoes (red or white-skinned), cut in quarters
- 2 yellow onions, thickly sliced
- 4 tablespoons good olive oil
- 4 tablespoons unsalted butter, melted
Fried Couscous Salad

For the couscous: In a medium saucepan, bring the chicken broth and salt to a boil over medium-high heat
- 2 cups low-sodium chicken broth
- 1/2 teaspoon kosher salt
- 1 (10-ounce) box (1 1/4 cups) couscous (recommended: Near East)
- 1/4 cup extra-virgin olive oil
- 2 cloves garlic, peeled and crushed
- 4 ounces ricotta salata cheese, cut into 1/2-inch pieces
- 1 small or 1/2 large cucumber, peeled, seeded, and cut into 1/2-inch pieces
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup grated Parmesan
- 1/4 cup chopped fresh basil leaves
- 1/4 cup extra-virgin olive oil
- Zest and juice from 1/2 large lemon
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper

Beef and Bean Burritos

Preheat the oven to 170 to 180 degrees F
- 1 medium onion, diced
- 2 pounds ground beef
- 1/2 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon ground oregano
- 1/4 teaspoon salt
- Three 7-ounce cans Mexican tomato sauce (I use El Patobrand) or enchilada sauce
- One 28-ounce can refried beans
- 3/4 cup grated Cheddar, plus extra for sprinkling
- 12 burrito-size flour tortillas
- 1/2 cup fresh cilantro leaves
Molasses Baked Beans

- 2 1/2 cups canned pork and beans
- 1/4 cup catsup
- 2 tbs. molasses
- 2 tbs. brown sugar
- 2 tbs. bacon drippings
- 1 small onion
- 1/2 large bell pepper chopped
- 3 drops hot sauce
Grown Up Mac and Cheese

Preheat the oven to 400 degrees F
- 4 ounces thick-sliced bacon
- Vegetable oil
- Kosher salt
- 2 cups elbow macaroni or cavatappi
- 1 1/2 cups milk
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 4 ounces Gruyere cheese, grated
- 3 ounces extra-sharp Cheddar, grated
- 2 ounces blue cheese, such as Roquefort, crumbled
- 1/4 teaspoon freshly ground black pepper
- Pinch nutmeg
- 2 slices white sandwich bread, crusts removed
- 2 tablespoons freshly chopped basil leaves
