Easy Tzatziki with Toasted Pita Crisps

- 1 hothouse cucumber, unpeeled and seeded
- 1/4 cup sour cream
- 2 tablespoons freshly squeezed lemon juice

- 1 tablespoon minced fresh dill
- 1 1/2 teaspoons minced garlic
- 2 teaspoons kosher salt

- 1 (8-ounce) piece pancetta, cut into 1/4-inch pieces

- 1 package Monterey Farms Grilled Artihearts (8 oz package)
- 1/4 cup Lizzie's Kitchen Roasted Garlic Dipping Oil, well-shaken and divided
