Oatmeal Cake (with coconut pecan frosting)

Mix the oatmeal with the boiling water, stir and cover
- ICING:
- 1/2 c quick-cooking oatmeal
- 3/4 c boiling water
- 1/2 c sugar
- 2/3 c flour
- 1/2 t salt
- 1/2 t baking soda
- 1 egg
- 1/4 c shortening
- 3 T melted butter
- 1/3 c brown sugar
- 1/2 c sweetened shredded coconut
- 1/2 c chopped nuts
- 2 T milk
- 1/2 t vanilla

- 2 3/4 c. all-purpose flour
- 2 t. cream of tartar

- Cake:
- 2 c. sugar
- 2 c. sifted flour
- 4 eggs
- 1 1/2 c. Wesson oil
- 1 t. baking powder
- 2 t. baking soda
- 1/2 t. salt
- 1/3 c. chopped nuts (pecans)
- 3 c. grated carrots
- 2 t. vanilla
- Icing:
- 1 box 10X sugar
- 1 t. vanilla
- 3 oz. cream cheese
- 1/2 stick margarine
- 1/2 c. chopped pecans
Strawberry Cheesecake Lush

1. Crush the entire package of Oreos
- 1 package Golden Oreos (36 cookies)
- 6 tablespoons butter, melted
- 8 ounces softened cream cheese
- 1 cup powdered sugar
- 1 (16-ounce) container Cool Whip, divided
- 2 packages (3.4 ounce each) instant cheesecake pudding mix
- 3 cups milk
- 3 1/2 cups sliced strawberries
Mom's Chicken Pot Pie

Mix first 6 ingredients. Put in large pot and stir until smooth
- Preheat oven 400°
- 1 can cream of potato soup
- 1 can cream of celery soup
- 1 can cream of chicken soup
- 1 c. milk
- 1/4 t. thyme
- 1/4 t. pepper
- 3 c. mixed vegetables already cooked
- 3 c. cooked and diced chicken
- 2 rolls refrigerated biscuits
Coconut - Cream Cheese Sheet Cake

1. Preheat oven to 350 degree F
- 1 c. butter, softened (2 sticks)
- 6 oz. cream cheese, softened
- 6 eggs
- 2 c. sugar
- 1 tsp . vanilla extract (I used 1/2 tsp vanilla and 1/2 tsp coconut extract)
- 2 1/4 c. cake flour or all purpose flour
- 1/4 c. coconut milk or cream of coconut ( optional )
- FROSTING - I DOUBLE THIS
- 1/4 c. butter, softened
- 4 oz. cream cheese, softened
- 1/2 tsp. vanilla or coconut extract is good as well
- 1 1/2 c. confectioners' sugar
- 1/2 c. coconut- for toasting and sprinkling on top of the frosting
- Note: You can add a few tablespoons milk, cream or coconut milk ( i don't, as i like a thick frosting on the cake.)
- THIS CAKE IS DENSE & IS NOT MISSING BAKING POWDER OR SODA…
- THE EGGS ARE THE LEAVENING AGENT

- Nonstick cooking spray
- 1 (2-pound) package frozen hash browns, thawed
- Salt and pepper
- 1/4 pound (1 stick) butter
- 1/2 cup minced onion (1 T. dried minced)
- 1 (8-ounce) container sour cream
- 1 (10.75-oz) can condensed cream of chicken soup
- 2 cups shredded Colby cheese
