- 1 small russet potato, peeled and chopped fine
- 1 small onion, chopped

The andouille, shrimp and Creole seasoning sent my tastebuds to heaven
- 2 Tbs. olive oil
- 1 lb. boneless, skinless chicken thighs, chopped into 1” pieces
- 1 lb. andouille sausage, sliced into rounds
- 1 lb. shrimp, peeled and deveined
- 2 celery stalks, diced
- 1 med. onion, diced
- 3 Tbs. garlic, minced
- 3 lg. green bell peppers, diced
- 1 jalapeno, diced
- 2 Tbs. tomato paste
- 1-14.5 oz can diced tomatoes
- 3 Cup chicken stock
- 2 tsp. worcestershire sauce
- 4 tsp. Louisiana hot sauce
- 1-1/2 Cup long grain white rice, rinsed
- 4 Tbs. Creole Spice – divided (more or less depending on brand)
- 1 bay leaf
- green onion for garnish
Maple-Pumpkin Tapioca Pudding

In a medium saucepan, whisk together the pumpkin puree, milk, maple syrup, egg, tapioca and spices

- 1/3 cups Real Maple Syrup

- 3 Tablespoons Quick-cook Tapioca

- 1 pinch Ground Cloves
- 2 teaspoons Vanilla Extract
- 1 Tablespoon Whipped Cream (optional)

Strawberry & Cream Cheese Stuffed French Toast

What do you with a loaf of French bread that is a little stale? Make croutons? Perhaps, unless you have an abundanc...
- For the strawberry filling:
- 6 eggs
- 1 cup whole milk
- 1 teaspoon real vanilla
- 6 slices of slightly stale French bread (fresh/soft bread will make soggy French Toast)
- 1 package cream cheese (I used Neufachtel)
- 1/2 cup powdered sugar
- Zest of one orange
- Pinch of kosher salt
- 1 teaspoon real vanilla
- 4 to 6 large strawberries (doesn't have to be exact), hulled, washed and coarsely chopped.
- NOTE: 1/2 cup ricotta cheese (optional)

- 3 ears corn, shucked
- 1 cup all-purpose flour
- 1/2 cup cornmeal (If you can only find cornmeal mix, skip the baking powder.)
- 1/4 cup diced red onion
- 1/4 cup thinly sliced fresh basil
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Sea salt and freshly ground black pepper
- 2 large eggs, lightly beaten
- 2 tablespoons well-shaken buttermilk
- 2 tablespoons unsalted butter, melted
- Canola oil, for frying
