White Bean Salsa Tacos with Cumin Cream & Spicy Lime Smashed Avocado

1 If using hard tacos, preheat oven according to package directions
- WHITE BEAN SALSA
- 1 can white beans, such as navy or kidney
- 2 roma tomatoes
- 1 sweet peppers
- 1/2 cup coarsely chopped cilantro
- 1/4 cup olive oil Salt and pepper
- CUMIN SOUR CREAM
- 1 cup sour cream
- V4 tsp (2 mL) ground cumin
- SPICY-SMASHED AVOCADO
- 1 jalapeno
- 4 ripe avocados
- 1 to 2 limes Salt and pepper
- 24 hard taco shells or soft tortillas
- 2 cups (500 mL) finely grated cheddar cheese
Pan Fried Liver with Thyme

Trim liver and toss in seasoned flour until evenly coated Heat the oil and butter in a frying pan
- 2 2 4 1/2 of calves liver about 4 1/2 oz
- 1 1 1 tbsp seasoned flower
- 2 2 2 tsp oil
- 1 1 1 tbsp butter
- 2 2 2 tbsp white wine
- 1/2 1/2 1/2 tsp fresh thyme or pinch of dried thyme
- 1 1 1 pinch of finely grated lime or lemon rind
- 2 2 2 tsp lemon juice
- 1 1 1 tsp capers
- 1-2 1-2 1-2 tbsp heavy cream
- Salt and pepper

- 4 slices bacon, chopped
- 8 ounces cremini mushrooms, thinly sliced

- 1 fresh chorizo, about 1/2 lb, removed from casing
- 4 tostadas
