CRANBERRY NUT BREAD

Preheat oven to 350 degrees, grease and lightly flour 9x5x3 inch loaf pan
- 1 cup chopped cranberries (fresh or frozen), 3/4 cup chopped nuts, 1 tablespoon grated orange peel, 2 cups flour, 1 cup sugar, 1 1/2 teaspoon baking powder, 1 teaspoon salt, 1/2 teaspoon baking soda, 2 tablespoon shortening, 3/4 cup orange juice, l egg.
PEPPER-CORN CASSEROLE

COOK RICE, SET ASIDE. SAUTE ONIONS, BELL PEPPER AND CELERY IN MELTED BUTTER IN LARGE SKILLET UNTIL TENDER
- 1 CUP RICE (uncooked), 1 CHOPPED ONION, 1 CHOPPED BELL PEPPER, 1 CUP CHOPPED CELERY, 1/2 CUP MELTED BUTTER, 1-2 JALAPENOS, SEEDED AND CHOPPED, 2 16OZ. CANS CREAMED STYLE CORN, 1 1/2 CUPS GRATED CHEDDAR CHEESE, 1 TABLESPOON SUGAR.
GREEN CHILIES CORN CASSEROLE

Combine corn, biscuit mix, egg, oil and milk, mix well
- 1 16 oz. can cream style corn, 1 cup biscuit mix, 1 egg (beaten), 2 tablespoons salad oil, 1/2 cup milk, 1 (4 oz.) can chopped green chilies drained, 6 oz. cheddar cheese, grated.
SWEET POTATO CASSEROLE

Add all ingredients for the casserole and pour into a greased casserole dish
- 3 cups mashed sweet potatoes, 1 cup sugar or more (to taste), 1/3 cup milk, 1 stick butter, 1 running over teaspoon vanilla, dash of salt, 2 eggs. TOPPING: 1 cup brown sugar, 1/3 cup butter, 1/3 cup flour, 1 cup pecan pieces, 1 cup coconut (optional).
MINESTRONE SOUP

BROWN GROUND BEEF AND ONIONS, ADD TO ALL OTHER INGREDIENTS IN A LARGE STOCK POT AND SIMMER
- 1-2 POUNDS GROUND BEEF, 1 CHOPPED ONION, 3 CANS PROGRESSO MINESTROME SOUP, 1 CAN DICED TOMATOES, 1 CAN WATER, OR MORE IF NEEDED, 1 CAN ROTEL TOMATOES, 1 CAN RANCH STYLE BEANS, 1 CAN WHOLE KERNAL CORN, SALT AND PEPPER TO TASTE, PINCH OF SUGAR
MEXICAN CORNBREAD WITH JIFFY MIX

Mix all together and bake at 400 degrees about 30 minutes or until golden brown
- 4 Boxes Jiffy Mix Corn Bread, 4 eggs, 1 cup milk, 1 cup sugar or less, fresh peppers to taste, 2 cups shreaded cheese, l can cream style corn.
BAKED CORN

Pour into greased casserole dish and bake at 350 degree oven for about 1 hour or until set and light brown
- 2 Eggs, 1 can cream style corn, 1 tablespoon flour, 2 tablespoons sugar, 1/4 teaspoon salt, pepper to taste, 1/3 cup milk, 2 tablespoons butter, melted.
TATER-TOT CASSEROLE

BROWN GROUND MEAT AND ONIONS, DRAIN
- 1 POUND GROUND BEEF, 1 CHOPPED ONION, 1 CAN CREAM OF MUSHROOM SOUP, 1 PACKAGE TATER TOTS, CHEDDAR CHEESE.
LIME JELLO SALAD

Mix jello and cold water together, set aside
- 2 small boxes lime jello, 2 cups cold water, 1 large can crushed pineapple, 1/4 cup lemon juice, 3/4 cup sugar, 1 cup grated cheese, 1 cup chopped pecans, 1 pint whipped cream.
