Green Bean and Red Potato Salad

All proportions are flexible
- Red potatoes to make 8 c. ?
- 2 c Green beans (haricot vert if possible, or Chinese long beans )in 1" pieces
- 3-5 cloves garlic
- TB Dijon mustard or to taste (vinaigrette)
- Lime Juice to taste (vinaigrette)
- Olive oil to taste (vinaigrette)
- S & P to taste
Beef Short Rib Ragu with Polenta

If you can’t find boneless short ribs, don’t substitute bone-in short ribs
- 1 ½ cups beef broth
- ½ ounce dried porcini mushrooms, rinsed
- 1 tablespoon extra-virgin olive oil
- 1 onion, chopped fine
- 2 garlic cloves, minced
- 1 tablespoon tomato paste
- 3 anchovy fillets, rinsed, patted dry, and minced
- ½ teaspoon five-spice powder
- ½ cup dry red wine
- 1 (14.5-ounce) can whole peeled tomatoes, drained with juice reserved, chopped fine
- 2 pounds boneless beef short ribs, trimmed
- ¾ teaspoon table salt

- 2-1/4 teaspoons active dry yeast (one 1/4-ounce envelope)
- 2 cups warm water (105 degrees to 115 degrees)
