- 1 1/2 cup dry white wine
- 1 Tbsp paprika
- 1 1/2 tsp salt
- Freshly ground black pepper
- 2 cloves garlic, cut in half
- 1 bay leaf
- 2 lbs lean boneless pork, cut into l-
- inch cubes
- 3 Tbsp olive oil
- 2 onions, thinly sliced
- 1 sweet red pepper, seeded, deribbed
- and cut into lengthwise into 1/2 -inch
- strips
- 2 tsp garlic, finely chopped
- 2 tomatoes, peeled, seeded and finely
- chopped
- 1 / 8 tsp crushed red pepper flakes
- 2 dozen little-neck clams, washed
- and thoroughly scrubbed
- 1/4 cup fresh coriander, finely
- chopped
- 1 lemon, cut into wedges
- 4 Yukon gold potatoes, diced and
- roasted until crisp(optional)
Beef Roast slow cooked

a 5lb rib roast takes about 4 hours
- Bring the roast to room temp
- score any fat on roast. Sprinkle roast with salt and pepper. Rub roast with oil.
- Place the roast on a rack in a shallow pan.
- Place the roast in the oven at 200 degrees.
- Slow cook for 4 to 5 hours for a 5 lb roast.
- Remove the roast when it reaches an internal temp of 118 degrees. Cover with foil and place in a warming draw if you have one. Try to not let it cool
- turn oven to 500 degrees.when temp is reached place uncovered roast back into hot oven.
- Check meat thermometer for desired temp. 125 degrees for rare, 140 degrees for medium, and 160 for well
Grilled Cheese With Melted Onion Mix

- Cheeses (or anything comparable):
- Sourdough bread, thickly sliced
- Red Dragon cheddar, grated (or other cheddar)
- Gruyère, grated
- Big John’s Cajun, grated
- Melted Onion Mix
- 3 tbsp butter
- 3 tbsp olive oil
- 2 cloves garlic
- 6 medium yellow onions, peeled and thinly sliced
- 1 red onion, peeled and sliced
- 1 large leek, sliced
- 5 shallots
- 4 oz dry white wine
- 1/4 tsp cayenne pepper
- Freshly ground pepper and salt, to taste
