a 5lb rib roast takes about 4 hours

  • Bring the roast to room temp
  • score any fat on roast. Sprinkle roast with salt and pepper. Rub roast with oil.
  • Place the roast on a rack in a shallow pan.
  • Place the roast in the oven at 200 degrees.
  • Slow cook for 4 to 5 hours for a 5 lb roast.
  • Remove the roast when it reaches an internal temp of 118 degrees. Cover with foil and place in a warming draw if you have one. Try to not let it cool
  • turn oven to 500 degrees.when temp is reached place uncovered roast back into hot oven.
  • Check meat thermometer for desired temp. 125 degrees for rare, 140 degrees for medium, and 160 for well
