Almond Rhubarb Coffee Cake

Preheat oven to 350 degrees F (175 degrees C)
- 1 1/2 cups packed brown sugar
- 2/3 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup milk
- 1 1/2 cups rhubarb, chopped
- 1/2 cup sliced almonds
- 1/3 cup white sugar
- 1 tablespoon butter, melted
- 1/4 cup sliced almonds
ORANGE SIMPLE SANGRIA RECIPE

Mix all together, and let sit in a fridge overnight
- 1 bottle Rioja (other red wines will do nicely too)
- 2 cups ginger ale
- 1/4 cup brandy
- 1/2 cup Triple Sec
- 4 slices orange

- 6 ounces sushi-grade tuna
- 1/4 cup English cucumber, 1/4″ diced
- 1 teaspoon sesame oil
- 1 teaspoon Sriracha
- 1 teaspoon toasted sesame seeds
- 1 teaspoon lime juice
- Pinch of salt
SAVORY CRAB CHEESECAKE

In small skillet, cook onion and garlic in butter about 5 minutes or until tender; cool
- 3/4 cup chopped onion
- 1 clove garlic -- minced

Lemon Blueberry Muffin Bread

This sweet breakfast bread tastes just like a giant blueberry muffin
- 2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 stick unsalted butter, room temperature
- 1 cup sugar
- 2 eggs
- 2 cups blueberries (12 oz)
- 2 tsp lemon zest
- 1/2 cup plain yogurt, regular or lowfat
Sweet Potato Bisque

In large pot, melt butter and sauté onion until tender, about 4 minutes
- 1 tablespoon butter
- 1 onion -- chopped
- 3 cups chunks fresh sweet potatoes -- (1/2-inch) peeled or 3 (15-ounce) cans sweet potatoes, drained
- 2 cups canned chicken or vegetable broth
- 1 teaspoon dried thyme leaves
- 1/8 teaspoon cayenne
- 1 cup skim milk
- Salt and pepper to taste
Cranberry Orange Sauce

- 1/2 cup fresh orange juice, from one orange
- 1/2 cup water
- 3/4 cup plus 2 tablespoons sugar
- 1 (12 oz) bag fresh or frozen cranberries (do not use dried)
- Zest of one orange, about 2 teaspoons
- Pinch salt
