Fresh Coconut Layer Cake

- For cake layers:
- 2 (1 1/2-pound) coconuts
- 1/4 cup sugar
- 3 1/3 cups sifted cake flour (not self-rising; sift before measuring)
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 1/2 cups whole milk
- 1 1/2 teaspoons pure vanilla extract
- 1/8 teaspoon pure almond extract
- 2 1/2 sticks unsalted butter, softened
- 1 3/4 cups sugar, divided
- 7 large egg whites, at room temperature 30 minutes
- For frosting:
- 3 large egg whites, at room temperature 30 minutes
- 2 1/4 cups sugar
- 3/4 cup water
- 1 1/2 tablespoons light corn syrup
- 1/2 teaspoon cream of tartar
- 1/8 teaspoon salt
- 1 teaspoon pure vanilla extract
Spicy Pasta Salad with Smoked Gouda, Tomatoes, and Basil

Cook pasta until done. Drain and rinse in cold water until no longer hot

Easy Puff Pastry Strawberry Tart

Preheat oven to 400°F. On a parchment lined baking sheet, roll out the puff pastry dough to a large rectangle
- 1 sheet frozen puff pastry, thawed
- 1 egg
- 2 teaspoons water
- sparkling sugar (optional)
- 1 pint strawberries, washed/hulled, and sliced into 3-4 slices each
- 1/4 cup strawberry jam

Golden Graham S’mores Bars

- 3 chicken breasts, sliced in half seasoned to personal preference (teriyaki) or rotisserie chicken

Chicken Pad Thai

Prepare rice noodles according to directions listed on package
- 10 oz Thai rice noodles
- 1 lb boneless skinless chicken breasts, sliced into small strips
- 2 Tbsp vegetable oil
- 1/4 cup packed dark-brown sugar
- 1/4 cup soy sauce
- 2 Tbsp rice vinegar
- 1 Tbsp lime juice
- 1 Tbsp fish sauce
- 1 red bell pepper, sliced into thin strips and strips halved
- 1 1/2 cups matchstick carrots
- 2 cloves garlic
- 4 green onions, whites minced, greens sliced into 1-inch pieces
- 2 cups bean sprouts
- 3 large eggs
- 1/2 cup unsalted peanuts, roughly chopped
- 1/3 cup cilantro, chopped
- Red pepper flakes and sesame seeds (optional)
Creamy Ricotta and Tomato Sausage Lasagna

Instructions Preheat your oven to 350 degrees
- 4 slices thick bacon roughly chopped
