- 3 medium shallots, diced
- 2 {heaping} teaspoons of Thai Red Curry Paste
- 1-1/2 cups Low Sodium Chicken Broth
- 1 cup Lite Coconut Milk
- 3/4 teaspoon Kosher Salt, divided
- 4 {6 to 8 ounce} Barramundi Fillets, thawed and skin removed
- 1/4 cup chopped Fresh Cilantro
- 1/4 cup chopped Fresh Parsley
- 2 Green Onions, sliced thin on the bias

- 1 cup warm milk (I used 2%)
- 2 1/2 cups bread flour
- 1 teaspoon pure vanilla extract
- 3 large egg yolks
- 2 tablespoons granulated sugar
- 1/2 teaspoon kosher salt
- 4 tablespoons (1/2 stick) unsalted butter, softened and cut into cubes
- Canola oil, for frying

- Cream:
- 2 cups milk (I used 2%, but I think coconut milk would be DELISH)
- 1 vanilla bean, split
- 1/2 cup granulated sugar
- 6 egg yolks
- 1/2 cup flour
- 1/4 teaspoon salt
- 1 cup heavy cream
- Hot Chocolate:
- 8 ounces bittersweet or semi-sweet chocolate
- 3/4 cup milk (again, coconut would be awesome!)
- 1 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons Cabernet wine or 2 teaspoons vanilla
