Rum Cake

Make the Cake: Preheat oven to 325 degrees F
- For the Cake:
- 1 cup (113 grams) chopped walnuts (optional)
- 1 3/4 cups (248 grams) all-purpose flour
- 1/4 cup (28 grams) cornstarch
- 4 teaspoons baking powder
- 1 teaspoon kosher salt
- 1/2 cup (113 grams) unsalted butter, at room temperature
- 1 1/2 cups (298 grams) granulated sugar
- 3 tablespoons + 1/2 cup (99 grams) canola oil, divided
- 2/3 cup DIY instant vanilla pudding mix (or one 3.4-ounce package of instant vanilla pudding)
- 4 eggs
- 3/4 cup (180 ml) whole milk
- 3/4 cup (180 ml) dark rum
- 1 tablespoon vanilla extract
- For the Rum Syrup:
- 3/4 cup (170 grams) unsalted butter
- 1 1/2 cups (298 grams) granulated sugar
- 1/4 cup (60 ml) water
- Pinch of salt
- 1/2 cup (120 ml) dark rum
Chocolate Turtle Pumpkin Torte

Preheat oven to 350F. Grease and flour two 8-inch round cake pans, or spray with flour based baking spray
- CAKE LAYERS:
- 2 cups/250g all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- 1 cup/200g granulated sugar
- 1/2 cup/ 115g dark brown sugar, packed
- 1/4 cup/ 50g vegetable oil
- 4 large eggs
- 15 oz. pumpkin puree
- 1 teaspoon vanilla
- FROSTING:
- 1/2 cup/113g unsalted butter
- 2/3 cup/53g unsweetened cocoa powder
- 3 cups/330g confectioners' sugar
- 1/3 cup/80g whole milk
- 1 teaspoon vanilla extract
- 28 oz. prepared dulce de leche
- 2-4 tablespoons heavy cream
- 1/2 lb. pecan halves
- Chocolate shavings
- Fleur de sel, if desired
Dulce de Leche Cheesecake Bars

Crust: Preheat oven to 350 degrees
- Crust:
- 20 whole graham crackers, broken into pieces
- 1 cup sliced almonds
- 1/2 cup Imperial Sugar Extra Fine Granulated Sugar
- 1 teaspoon salt
- Nonstick cooking spray
- 10 tablespoons butter, melted
- Filling:
- 3 packages (8 oz) cream cheese, at room temperature
- 1 cup Imperial Sugar Extra Fine Granulated Sugar
- 3 eggs
- 1/2 cup Dulce de Leche

Grilled Artisan Cheddar & Fig Jam Sandwich

- TUSCAN BURGER MIX:
- 1 pound ground beef
- 1/4 red onion, finely chopped
- 1 handful fresh flat-leaf parsley, leaves picked and finely chopped
- 1 tablespoon grated Pecorino
- 1 egg yolk
- SERVING:
- 4 slices provolone cheese
- 4 burger buns
- Kosher salt and freshly ground black pepper

- 1/2 T (or 1.5 t) active dry yeast
- 2/3 cup all-purpose flour
- And everything else:
- 2 t active dry yeast
- 1 cup minus 2 T (or 14 T) whole milk
- 3 cups all-purpose flour
- 1/6 cup sugar
- 2 t salt
- 1/2 T unsalted butter, melted
- 2-3/4 sticks (or 22 Tbsp) unsalted butter, cool but malleable
- 1 egg & a pinch of salt for the egg wash
Creamy Chicken and Wild Rice Soup

In a large sauce pot over medium heat, saute celery and carrots in the olive oil for about 5 minutes
- 2 tablespoons olive oil
- 1/2 cup chopped celery
- 1/2 cup diced carrots
- 1 cup diced mushrooms
- 4 cups chicken broth
- 2 cups water
- 1 cup of cooked chicken, cubed
- 1 4.3-oz package of long grain and wild rice & seasoning packet (I just used Rice-a-Roni)

- 2 cups half and half
Cold Peanut Sesame Noodles

- 1 lb soba, rice or other thin noodles- cooked, and cooled
- 1/2 cup creamy peanut butter
- 3 tablespoons soy sauce
- 3 tablespoons Sriracha or 1 tablespoon Szechwan chili paste*
- 3 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon grated peeled ginger
- 1 small cucumber
- 1 red bell pepper
- 1 green onion
