Sriracha Chicken Salad with Blue Cheese and Green Goddess Dressing

For the Chicken First, dice chicken into bite-sized pieces and set aside
- For the Chicken:
- 2 boneless, skinless chicken breasts
- 1 tablespoon EVOO
- 1/2 cup ground oat flour + salt and pepper, to taste
- 1 large egg
- 1/4 cup sriracha
- 1/2 lemon (juice)
- 2 tablespoons honey
- 2 teaspoons garlic powder
- For the Green Goddess Dressing:
- 1/2 cup fresh parsley
- 1/2 cup fresh cilantro
- 1/3 cup greek yogurt
- 1 tablespoon minced garlic
- 1/2 lime (juice)
- salt, to taste
- For the Salad:
- 4 handfuls of mixed greens
- 1/4 cup blue cheese
- 4 radishes, thinly sliced
- 1/4 red onion, diced
- 1 avocado, sliced
Oven Baked Salmon

Preheat the oven to 400 degrees F
- 2 lbs. wild caught whole salmon fillet
- 2 Tb. olive oil
- 1 lime, zest and juice
- 2 garlic cloves, minced
- 1 jalapeño, grated
- Salt and pepper
Blueberry Crème Fraîche Cheesecake

Preheat oven to 400 degrees F
- For Crust:
- 1 1/2 cups vanilla wafer cookie crumbs (from about 7 ounces)
- 1/4 cup almond meal or finely ground almonds
- 2 tablespoons brown sugar
- pinch salt
- 5 tablespoons butter, melted
- For Filling:
- 16 ounces full-fat cream cheese, room temperature*
- 2/3 cup granulated sugar
- 1 teaspoon fine sea salt
- 3 tablespoons all-purpose flour
- 4 large eggs, room temperature
- 2/3 cup crème fraîche** or sour cream, room temperature
- 2 tablespoons freshly squeezed lemon juice
- 1 1/2 teaspoons vanilla extract
- 3/4 teaspoon almond extract
- For Glaze:
- 1 cup crème fraîche or sour cream
- 1/2 cup granulated sugar
- 1/2 teaspoon almond extract
Lemon Poppy Seed Muffins

Preheat oven to 400 degrees
- Glaze:
- 3 cups all-purpose flour
- 3 Tbsp poppy seeds
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup + 2 Tbsp granulated sugar
- 6 Tbsp unsalted butter, softened
- 1/4 cup canola or vegetable oil
- 1 Tbsp lemon zest
- 2 large eggs
- 1 large egg yolk
- 1 tsp vanilla extract
- 2/3 cup milk
- 2/3 cup sour cream
- 3 Tbsp lemon juice
- 1 cup powdered sugar
- 2 Tbsp fresh lemon juice
Spicy Red Curry and Coconut Noodle Soup with Shrimp

1. Fill a large pot with water and bring to a boil
- garnish:
- 8 ounces flat rice noodles (medium width, same as used for Pad Thai)
- 2 tablespoons extra virgin olive oil or coconut oil
- 3 tablespoons minced shallots
- 3 garlic cloves, minced
- 2 teaspoons minced ginger
- 2 Thai chiles, split in half lengthwise
- 1/4 cup plus 1 tablespoon red curry paste
- 1 1/2 cups chicken stock
- 1 tablespoon fish sauce
- 2 (15 ounces cans) coconut milk
- 3 kaffir lime leaves (or the juice of 2 limes)
- 10 large shrimp, peeled and deveined with the tails intact
- salt and pepper to taste
- cilantro leaves
- lime zest
- thinly sliced red onions
- lime wedges, on the side
Cherry 7 Up Pound Cake

Preheat oven to 315 F. (yes, it's a lower temperature than normal)
- For the Cake:
- 1 1/2 cups unsalted butter, softened
- 3 cups granulated sugar
- 1 tsp kosher salt
- 5 large eggs
- 3 cups cake flour
- 1/2 cup Cherry 7 Up
- 1/2 cup maraschino cherries, stems removed, patted dry
- For the Glaze:
- 2 cup powdered sugar, divided
- 3 Tbsp maraschino cherry juice
- 2 Tbsp milk

Portobello, Gouda and Kale Pesto Grilled Cheese

- 4 slices thick rustic bread (I used pugliese)
- 2 small Portobello mushrooms
- 4 ounces gouda
- 1/2 cup kale pesto
- Olive oil

Apple Cheesecake Napoleons
