Sweet and Spicy Orange Salmon

Whisk together orange juice, orange zest, soy sauce, honey, sesame oil, and sriracha in a bowl
- Juice from one orange (about 1/4 cup)
- Zest from one orange
- 1/4 cup reduced-sodium soy sauce
- 1/4 cup honey
- 1 tsp sesame oil
- 3 tbsp sriracha, more or less to taste
- Salmon fillet(s), between 1 1/2 - 2 lbs total

Start by making the dough
- For the CRUST:
- 2 1/2 Cups All Purpose Flour
- 1 Teaspoon Salt
- 1 Teaspoon Sugar
- 1 Cup Cold Unsalted Butter
- 1 Egg, beaten
- 1/4 – 1/2 Cup Cold Water
- For the SALTED CARAMEL:
- 1/2 cup granulated sugar
- 2 tablespoons water
- 2 tablespoons light corn syrup
- 1/3 cup heavy cream
- 2 tablespoons unsalted butter
- 1/2 teaspoon sea salt
- For the Apple Filling:
- 1 Tablespoon Sugar
- Pinch of Cinnamon
- 2 Tablespoons Lemon Juice
- 3 Granny Smith Apples, peeled and thinly sliced
- 1/4 Cup Chopped Peanuts (optional)
Burrata BLT with Spicy Mayo

Preheat your oven to 375 degrees F
- 6 slices of thick-cut bacon
- 1/2 cup mayo
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1 teaspoon lemon juice
- 4 slices sandwich bread (I used Trader Joes’ Whole Wheat and Flax), lightly toasted
- 4 ounces fresh Burrata cheese
- 1 large tomato, sliced
- 2 cups fresh wild arugula
Black Bottomed Chocolate Vanilla Swirl Cheesecake

FOR THE CRUST: Place the nuts and coconut in a food processor fitted with an 'S' blade
- FOR THE CRUST:
- 3/4 cup Pecans
- 3/4 cup Walnuts
- 1/4 cup Unsweetened Shredded Coconut (finely shredded works best)

- 3/4 cup Coconut Milk (canned)

- 1 teaspoon Vanilla
- FOR THE CHEESECAKE LAYER:
- 3 cups Cashews, soaked overnight
- 1 1/2 cups Almond Milk (coconut milk works too)
- 2 tablespoons Vanilla (you may only need 1 tablespoon if your vanilla is strong)
- 1/2 cup + 3 tablespoons Maple Syrup, divided
- 1/4 teaspoon Sea Salt
- 2 tablespoons Sunflower Lecithin
- 2 teaspoons Lemon Juice
- 1/3 cup Coconut Butter (softened)
- 1/4 cup Coconut Oil, divided
- 1/3 cup Raw Cacao Powder
