Cranberry Coffee Cake Muffins

First, preheat the oven to 375, and line a small muffin pan with 5 liners
- Streusel topping:
- 1/3 cup light brown sugar
- 1 tablespoon granulated sugar
- pinch of salt
- 1/4 teaspoon cinnamon
- 2 tablespoons unsalted butter, melted
- 1/4 cup all-purpose flour
- For the muffins:
- 1/4 cup neutral oil (grapeseed or canola)
- 1/3 cup granulated sugar
- pinch of salt
- 1 large egg, beaten
- 1/4 cup sour cream (or full-fat yogurt)
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/2 cup fresh cranberries
Mint Julep Popsicles

Add sugar and water to a medium sauce pan over medium-low heat and stir until the sugar completely dissolves
- 2 1/2 cups water
- 1 cup demerara sugar
- 1 cup mint
- 1/3 cup bourbon
Pumpkin Bacon & Flax Dog Biscuits + Tuna & Cheddar Cat Crisps

To make the dog biscuits, mix together the flour, flax, and baking powder in a medium-sized bowl until well blended
- Pumpkin Bacon & Flax Dog Biscuits:
- 1 and 1/2 cups oat flour
- 2 tablespoons flax
- 1/4 teaspoon baking powder
- 1/2 cup pureed pumpkin
- 2 tablespoons water
- 2 tablespoons olive oil
- 2 strips bacon, fried and broken into roughly 1/4 inch square pieces
- Tuna & Cheddar Cat Crisps:
- 12 ounces tuna, canned in water; drained
- 1 egg
- 2 tablespoons vegetable oil
- 1/2 cup shredded cheddar cheese
- 1 tablespoon fresh parsley, chopped
- 1 and 3/4 cups oat flour

Preheat oven to 250 degrees
- Popcorn:
- 5-6 cups of air popped popcorn
- 2/3 cup brown sugar
- 1 tablespoon molasses
- 5 tablespoons unsalted butter, cut into chunks
- 1/2 teaspoon kosher salt
- 1/2 teaspoon vanilla extract
- 1 cup salted cashews
- Waffle cones:
- 2-3 waffle or regular ice cream cones (use gluten free cones for a gluten free version)
- 1 1/2 cups plain greek yogurt (may use regular yogurt if desired)
- 1/2 teaspoon vanilla extract
- 1 banana, sliced
- 6-9 (rounded) tablespoons Nutella
Mexican Rice

Heat olive oil in a large skillet over medium heat
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 1 1/2 cups basmati rice
- 1 (8-ounce) can tomato sauce
- 1 1/2 cups chicken broth
- 1 cup corn kernels
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 1/4 teaspoon chili powder
- 1/4 teaspoon cumin
- Kosher salt and freshly ground black pepper, to taste
- 2 Roma tomatoes, diced
- 2 tablespoons chopped fresh cilantro leaves
Roasted Poblano Beef Stew

1. Broil poblano peppers 4 inches from the heat until skins blister, about 5 minutes
- 5 poblano peppers
- 1 boneless beef chuck roast (2.5 to 3 pounds), cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 32 ounces beef broth
- 1 14.5-ounce can of diced tomatoes (I used Hunts Fire Roasted with garlic)
- 1/3 cup minced fresh cilantro
- 2 teaspoons Worcestershire Sauce
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon freshly ground black pepper
- 2 large potatoes, peeled and cut into 1-inch cubes
Autumn Colors Cocktail

Place all ingredients into a shaker, shake
- 1 1/4 oz. vodka
- 3/4 oz. pomegranate liqueur
- 1/2 cup sweet ice tea
- 1/4 tsp. grated orange zest

- Cookie Base:
- 1 pouch (1 lb. 15oz.) Betty Crocker Oatmeal Chocolate Chip Cookie Mix
- 1/2 c. butter, softened
- 1 egg
- Cheesecake Topping:
- 3 (8 oz. each) packages cream cheese, softened
- 3/4 c. sugar
- 1/2 c. heavy whipping cream
- 3 eggs
- Fruit Filling:
- 1 jar (12 oz.) blueberry preserves
- 1-1/2 c. fresh or frozen blueberries
Chile Margarita

Rub the rim of an old-fashioned cocktail glass (or other glass of your choice) with the lime wedge
- Lime wedge
- Paprika salt (see note 1)
- Ice
- 1 1/2 ounces tequila
- 1 1/2 ounces fresh lime juice
- 1 ounce simple syrup (see note 2)
- A few dashes orange bitters
- 1/4 serrano chile, chopped
Sesame Ginger Miso Cucumber Salad

- Salad:
- 2 large english cucumbers
- 1 1/2 cups frozen shelled edamame, defrosted
- 2 medium carrots, julienned
- 1 tablespoon toasted white and black sesame seeds (you can also just use one kind if you want!)
- Optional: 1 sheet of nori, cut into small 1-inch long 1/8-inch wide strips.
- Sesame Ginger Miso Dressing:
- 2 1/2 tablespoons white miso
- 1 1/2 tablespoons hot or warm water
- 2 tablespoons rice vinegar
- 1 tablespoon + 1 teaspoon finely grated ginger, peeled
- 1 tablespoon honey or maple syrup
- 1 tablespoon + 1 teaspoon sesame oil
- 2 teaspoons lemon juice (from 1 lemon)
- 1/2 teaspoon tamari sauce (or soy sauce)
