Slow Cooker Bacon Blue Cheese Brisket

In a large skillet, cook HALF of the bacon over medium heat until it is flexible but not crispy
- 1 pound thick-cut bacon, divided
- 2 large sweet onions
- salt and pepper
- 3 and 1/2 pounds flat-cut boneless beef brisket
- 3 cups water
- 4 teaspoons good quality beef bouillon (I use Better than Bouillon)
- 1 teaspoon cracked black pepper, optional
- 4-6 ounces crumbled blue cheese
Peach Cobbler with Blueberries & Bourbon

- For the Biscuit Topping:
- 2 pounds fresh peaches, cut into thick wedges

- 1 lb of butter, cool room temperature, cut into tablespoons sized pieces
- 1 tsp coconut extract
- 1/2 tsp natural yellow food dye
- Garnish:
- 2 tsp cocoa powder
- 2 tsp water

- 8 large egg yolks

- Kosher salt to taste
- Sliced jalapeños
