BBQ Pulled Pork Skillet Nachos

Skillet nachos are loaded up with BBQ pulled pork and are so addicting, they will be gone in minutes!
- 2 large yellow onions, quartered
- 1/3 cup brown sugar
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 2-3 pound pork shoulder
- 1 1/2 cups BBQ sauce, divided
- 10 ounces corn tortilla chips
- 1 cup white cheddar cheese, grated
- 1 cup monterey jack cheese, grated
- 1 14-ounce can black beans, drained and rinsed
- 2 jalapeños, seeds and stems removed, sliced into rings
- 1 large avocado, cubed
- 1/4 cup cilantro, chopped
- sour cream
- pico de gallo
Cheater Pho (Asian Noodle Soup)

In a large pot of water, cook rice noodles according to package instructions; drain well and set aside
- FOR THE GARNISHES:
- 8 ounces dried rice noodles
- 2 tablespoons olive oil, divided
- 1 pound boneless, skinless chicken thighs, cut into 1-inch chunks
- Kosher salt and freshly ground black pepper
- 3 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 6 cups chicken stock
- 2 tablespoon hoisin sauce
- 1 tablespoons fish sauce
- 1 onion, thinly sliced
- 2 cups bean sprouts
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh mint leaves
- 1 jalapeno, thinly sliced
- 2 limes, halved
Banana Macadamia Nut Cake

Preheat oven to 350 degree F
- FOR THE CAKE:
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract (I use Rodelle)
- 2 large bananas
- 1 3/4 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp kosher salt

- 1/2 tsp vanilla extract (I use Rodelle)

1. Preheat oven to 350°F
- For the BATTER:
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup lightly packed light brown sugar
- 1/4 cup buttermilk
- 2 teaspoons baking powder
- 2 eggs
- 1 1/2 teaspoon vanilla
- 2 cups Gold Medal all-purpose flour
- 2 teaspoons homemade apple pie spice
- 1/2 teaspoon salt
- 2 cups shredded, peeled apple (about 4 medium or 2 large) (see note below)
- 3/4 cup chopped pecans
- 1/2 cup dried cranberries
- For the TOPPING:
- 1/4 cup lightly packed light brown sugar
- 3 tablespoons all-purpose flour
- 1/4 teaspoon homemade apple pie spice
- 2 tablespoons unsalted butter
- 1/3 cup chopped pecans
- For the APPLE PIE SPICE:
- 4 tablespoons ground cinnamon
- 1 1/2 teaspoons ground nutmeg
- 1/2 teaspoon ground allspice

Shrimp In Thai Coconut Sauce

Peel and devein shrimp, leaving tails on
- 1 pound jumbo shrimp, shell and tail on
- 4 tablespoons vegetable oil, divided
- 2 gloves garlic, minced or pressed
- 1/4 teaspoon kosher salt
- 1/4 teaspoon red chili flakes
- 1/2 onion, peeled and sliced
- 1/2 red bell pepper, seeded and sliced
- 1/2 orange bell pepper, seeded and sliced
- 1/2 yellow bell pepper, seeded and sliced
- 1 cup coconut milk
- 4-6 tablespoons high quality fish sauce (start with 4 tablespoons and add more to taste)
- 2 tablespoons peanut butter
- 2 tablespoons lime juice (about 1/2 large lime, juiced)
- 1 tablespoon brown sugar
- 2 teaspoons ground ginger
- 2 tablespoons basil leaves, chopped
- 2 tablespoons cilantro, chopped
- 1 green onion, chopped
- Red jalapeno pepper, thinly sliced (optional)
