Cider-Glazed Apple Bundt Cake

1. Bring cider to boil in 12-inch skillet over high heat; cook until reduced to 1 cup, 20 to 25 minutes
- 4 cups apple cider
- 3 ¾ cups (18 3/4 ounces) all-purpose flour
- 1 ½ teaspoons salt
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ¾ teaspoon ground cinnamon
- ¼ teaspoon ground allspice
- ¾ cup (3 ounces) confectioners' sugar
- 16 tablespoons unsalted butter, melted
- 1 ½ cups packed (10 1/2 ounces) dark brown sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 ½ pounds Granny Smith apples, peeled, cored, and shredded (3 cups)

To make muffins, preheat oven to 425 degrees
- 1 lg. egg
- 1/2 c. milk
- 1/4 lb. butter (1 stick), melted and cooled
- 1 (8 1/2 oz.) can creamed corn
- 1 c. all-purpose flour
- 1 c. yellow cornmeal
- 1 tbsp. sugar
- 1 tbsp. baking powder
- 1 tsp. salt
- 2 to 3 dashes Tabasco sauce
- 3 tbsp. diced green chilies, optional
- 1/4 lb. unsalted butter, room temperature
- 1/4 c. honey
Roasted Eggplant Caponata

Preheat the oven to 400 degrees F
- 1 large eggplant (1 1/2 pounds)
- Good olive oil
- 4 ounces jarred roasted red peppers, chopped
- 1/2 cup large green olives, pitted and chopped
- 1 cup chopped yellow onion
- 1/8 teaspoon crushed red pepper flakes
- 1 tablespoon minced garlic (3 cloves)
- 3 tablespoons minced parsley
- 2 tablespoons pine nuts, toasted
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons drained capers
- 2 tablespoons tomato paste
- 1 tablespoon red wine vinegar
- 2 teaspoons kosher salt
- 1 1/2 teaspoons freshly ground black pepper
- Toasted pita triangles, for serving

- 1 1 1 tablespoon baking soda
- 1 1/2 1 1/2 1/2 teaspoons baking powder
- 1 1/2 1 1/2 1/2 teaspoons kosher salt

- 1 1/2 1 1/2 1/2 cups buttermilk
- 1 1/2 1 1/2 1/2 cups warm water

Sour Cream Coffee Cake

Grease & flour 9” bundt cake pan
- Cream together:
- 1 C. butter (I use unsalted)
- 2 C. sugar
- 2 eggs
- Fold in 1 C. sour cream & 1/2 tsp. vanilla. Then fold in 2 C. sifted cake flour. I honestly don’t sift anymore… don’t really need to. A good substitute if you don’t have cake flour is: 2 T. cornstarch & remainder of the 2 C, flour.
- Topping, mix together (I use a fork):
- 3/4 C. chopped nuts
- 2 tsp. cinnamon
- 4 T. brown sugar
