Creamy Macaroni and Cheese

Boil the macaroni in a 2 quart saucepan in plenty of water until tender, about 7 minutes
- 2 cups uncooked elbow macaroni (an 8-ounce box isn't quite 2 cups)
- 4 tablespoons (1/2 stick) butter, cut into pieces
- 2 1/2 cups (about 10 ounces) grated sharp Cheddar cheese
- 3 eggs, beaten
- 1/2 cup sour cream
- 1 (10 3/4-ounce) can condensed Cheddar cheese soup
- 1/2 teaspoon salt
- 1 cup whole milk
- 1/2 teaspoon dry mustard
- 1/2 teaspoon black pepper

- Filling:
- 30 ounces whole-milk ricotta
- 2-1/4 cups powdered sugar, sifted
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla
- 6 ounces semi-sweet mini chocolate chips
- zest of 2 lemons
- Cake:
- 2 cake layers, white, yellow or your favorite flavor
- 1/2 cup rum or Marsala
- 2 tablespoons water
- Frosting
- 2 cups heavy whipping cream
- 1/3 cup powdered sugar, sifted
- 1 tablespoon rum or Marsala

- This recipe produces a very dense cake layer. The only leavening is the air incorporated into the eggs when beaten. For best results, eggs should be at room temperature before beating with sugar.
