Calabrese Fried Eggplant

For the eggplant: Place an oven rack in the center of the oven
- Eggplant:
- Vegetable oil cooking spray
- One 1-pound eggplant, ends trimmed, halved lengthwise
- 1 tablespoon extra-virgin olive oil
- Filling:
- 1 cup grated pecorino cheese
- 1/2 cup plain breadcrumbs, plus extra, as needed
- 1/4 cup chopped fresh basil leaves
- 1 large egg, beaten
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh flat-leaf parsley
- Sauce:
- 2 cups jarred marinara or tomato-basil sauce
- 3/4 teaspoon crushed red pepper flakes
- Vegetable oil, for frying
- 1/2 cup grated pecorino cheese
Marinated Pork Tenderloin

Stir together first 3 ingredients in a shallow dish or heavy duty ziptop plasstic bag
- 1/4 cup soy sauce
- 1/4 cup bourbon or apple juice
- 2 tbsp. brown sugar
- 1 1/2 pounds pork tenderloin
- 1/3 cup sour cream
- 1/3 cup mayonnaise
- 1 tbsp. dry mustard
- 1 tbsp. minced onion
- 1 1/2 tsp. white vinegar
Chili con Carne

1. Cover chiles with hot water and steep until soft (about 20 minutes)
- 2 dried pasilla or poblano chiles
- 2 1/2 lb. 90 percent lean ground beef
- 3-4 tbs olive oil
- 2 large Spanish onions, finely sliced
- 8 large cloves of garlic, minced
- 1 cup diced carrot
- 1 1/2 tbs ground cumin
- 2 tsp red chili flakes
- 1/4 cup chili powder
- 1/2 tsp ground cinnamon
- 1 bottle dark beer or ale (up to 2)
- 2 16oz cans tomato sauce
- 2 tbs tomato paste
- 1 tbs red wine vinegar
- 1 14oz can beef broth
- 3 16oz cans pinto, kidney or black beans
- salt and pepper
- optional - 1 tsp chipotle chile in adobo sauce
Grilled Peanut Chicken Kabobs

- Approx. 1 1/2 lbs boneless, skinless chicken breasts.
- 2 red peppers, cut into large chunks
- 4 green onions, cut into 1 inch pieces
- 1 yellow summer squash
- 1 green summer squash
- 1/2 cup peanut butter
- 1/4 cup peanut or vegetable oil
- 2 tbs white wine vinegar
- 2 tbs fresh parsley, chopped
- 2 tsp red pepper flakes (more or less to taste)
- 1/4 cup soy sauce
- 2 tbs lemon juice
- 4 garlic cloves, minced or pressed
- 2 tsp finely chopped fresh ginger root
- 1 tbs chopped cilantro (optional)

- 1/2 cup unsalted butter, room temperature, plus more for pan
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt

Prepare 1 box of brownie mix as label directs
- 1 box family size brownie mix
- 1 cup hazelnuts
- 1/2 cup chocolate hazelnut spread
Rocky Road Brownies

Preheat oven to 350º. Coat a 9X13 inch baking pan with nonstick spray
- For brownies:
- 2 cups flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp instant espresso powder
- Melt:
- 2 sticks unsalted butter
- 1 1/4 cups granulated sugar
- Stir In:
- 2 cups semisweet chocolate chips, divided
- 3 eggs
- 2 tsp vanilla extract
- For the topping, heat:
- 1/4 cup heavy cream
- 3 oz. bar milk chocolate, finely chopped
- 1 1/2 cups miniature marshmallows
- 1/2 cup chopped dry roasted peanuts
Campbell's One Dish Chicken & Rice Bake

- 1 can (10 3/4 oz) Campbell's Cream of Mushroom soup
- 1 cup water
- 3/4 cup uncooked regular long-grain rice
- 1/4 tsp, each, paprika and red pepper
- 4 skinless, boneless chicken breast halves
