Black Bean Cakes w/Mexican Rice and Slaw

Puree the first 5 ingredients for the slaw in a food processor; toss with cabbage then season with salt
- Puree; Toss with:
- For the Slaw—
- 1/3 1/3 1/3 cup sour cream
- 1/4 1/4 1/4 cup scallions, thinly sliced
- 10 10 10 sprigs fresh cilantro
- 1/2 1/2 1/2 jalapeño, seeded, chopped
- 1 of 1 lime
- 1 1/2 1 1/2 1/2 cups cabbage, shredded
- to to taste
- For the Rice—
- in 1 T. Olive Oil; Stir in:
- 1/3 1/3 1/3 cup each of onion, carrot, and celery, diced
- 3 3 3 garlic cloves, thinly sliced
- 1 1 1 T. tomato paste
- 1/2 1/2 1/2 t. each of kosher salt, ground cumin, and paprika
- 1/4 1/4 1/4 t. cayenne
- 1 1 1 bay leaf
- 1/2 1/2 1/2 cup converted white rice
- 1 1 1 cup chicken broth or water
- For the Cakes—
- Mash Together; Add:
- 1 1 1 can black beans, drained, rinsed, divided (15 oz.)
- 1 1 1 egg white
- 1/4 1/4 1/4 cup corn tortilla chips, ground
- 1/4 1/4 1/4 cup red bell pepper, diced
- 2 2 2 T. onion, grated
- 1/2 1/2 1/2 t. each of kosher salt, ground coriander, and chili powder
- Fry in; Garnish with:
- 2 2 2 T. olive oil
- Lime wedges
- Fresh cilantro sprigs
Carrot, Cilantro, and Chile Slaw

Toss carrots, oil, lime juice, sugar, 1/2 tsp
- 12 oz carrots (preferably assorted colors), peeled, julienned (about 4 cups)
- 2 T vegetable oil or grapeseed oil
- 1 T fresh lime juice
- 1/2 T sugar
- 1/2 t kosher salt plus more for seasoning
- 2 jalapeños, stemmed, seeded, minced
- 1/2 c (loosely packed) fresh cilantro leaves
- 3/4 t ground coriander
- Freshly ground black pepper
Twice-Roasted Sweet Potatoes with Hot Honey

Preheat oven to 350°. Poke holes all over sweet potatoes and wrap each in foil
- 3 medium sweet potatoes or garnet yams, scrubbed (about 3 pounds)
- 1 Fresno or other red chiles, thinly sliced
- 1/4 cup honey
- 4 tablespoons unsalted butter
- Kosher salt
- 2 tablespoons apple cider vinegar

Preheat oven to 375 degrees F (190 degrees C)
- 12 slices bacon
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 cups white sugar
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
- 2 eggs
- 1 cup cold, strong, brewed coffee
- 1 cup buttermilk

Arthur Schwartz's Russian Sweet and Sour Cabbage Soup

Sprinkle the meat on all sides with salt, then place it in a heavy, 8-quart pot
- 2 pounds flanken or short ribs
- 1/2 teaspoon salt

Szechuan Pork Noodles with Bok Choy

- 1 pound ground pork
- 1 head bok choy, chopped
- 3 tablespoons soy sauce
- 2 tablespoons plus 1 1/2 tsp. minced fresh ginger
- 2 teaspoons Chinese five-spice powder
- 12 ounces spaghetti, cooked
- Sesame chile oil
- 2 scallions, sliced
Easy Whole Wheat Dinner Rolls

Method: To get started, make sure that all ingredients are at room temperature
- 1 1/4 cup whole wheat flour
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1 (0.25-ounce) package active dry yeast
- 1 cup warm (105 to 115°F) milk
- 3 tablespoons butter, melted
- 1 large egg, lightly beaten
- 1 cup all-purpose flour
