Magical Summer Rolls

Make the sauce by blending all ingredients in a high-speed blender
- OR THE SUMMER ROLLS:
- 8-10 rice papers
- 1-2 avocados
- Sunflower sprouts
- 1 big carrots
- 1 bell pepper
- 1 cucumber
- 2 yellow beets
- 2 polka beets
- Cilantro (optional)
- FOR THE ALMOND BUTTER SAUCE
- 1/3 cup almond butter (raw or roasted, the roasted one will have a richer taste)
- 2 tablespoons maple syrup
- 1 tablespoon tamari
- 1 tablespoon brown rice vinegar
- 1 tablespoon sesame oil
- 1/2 garlic clove
- 1 small piece of red pepper (according to taste)
- 1 small piece of fresh ginger
- 1/3 cup water

- 2 cups packed fresh baby spinach leaves
- 1 cup sliced strawberries
- 1 cup pineapple chunks
- 1/4 cup dried cranberries, or dried blueberries
- 1/2 cup salted cashews, or other nut like pecans or walnuts
- 1/2 cup extra virgin olive oil
- 1/3 cup apple cider vinegar
- 1/4 cup plain greek yogurt
- 1 tablespoon dijon mustard
- 3 tablespoons honey
- 1/3 cup orange juice
- 2 teaspoons poppy seeds
- optional: pinch of salt and pepper

Moist, chocolatey and delicious – finally a low-fat, gluten-free brownie that's pretty darn good!
- 1 (14 oz) canned low-sodium black beans, rinsed and drained
- 2 large eggs
- 1/2 cup cocoa powder
- 3/4 cup sugar
- 1/2 teaspoon oil
- 1 tablespoon unsweetened almond milk (or dairy, skim)
- 1 teaspoon balsamic vinegar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon of freshly ground coffee or instant coffee
- 1 cup semisweet chocolate chips, divided (Hershey's)
Mexican Crab & Cheese Dip

The rich, fantastic flavors in this Warm Beer-Cheese Mexican Crab Dip make it necessary to double the batch
- 1 block Mexican Velveeta, cubed
- 8 ounces cheddar, shredded
- red pepper, diced
- 3 to 4 green onions, diced
- 4 to 6 ounces crab (or imitation crab), flaked
- Beer or wine, to thin it out
Spring Lamb Ragu with Lemon and Olives

Heat EVOO in a Dutch oven over medium-high heat
- 2 tablespoons EVOO Extra Virgin Olive Oil
- 1 1/2 pounds ground lamb
- 1 onion, finely chopped
- 4 cloves garlic, finely chopped
- 1 stick cinnamon
- 2 bay leaves
- Salt and pepper
- Zest of 1 lemon, juice of half, divided
- 3/4 cup good quality pitted Sicilian green olives, chopped
- 2 tablespoons tomato paste
- 1 cup dry white wine
- 2 cups chicken stock
- 1 pound egg tagliatelle or fettuccine
- 1/4 cup finely chopped mint
- 1/4 cup finely chopped parsley
- Freshly grated Pecorino cheese
