Cashew Chicken - Crockpot

Combine flour and pepper in large Ziploc bag
- 2 lbs boneless, skinless chicken thigh tenders or chicken breast tenders
- 1/4 cup all purpose flour
- 1/2 tsp black pepper
- 1 Tbsp canola oil
- 1/4 cup soy sauce
- 2 Tbsp rice wine vinegar
- 2 Tbsp ketchup
- 1 Tbsp brown sugar
- 1 garlic clove, minced
- 1/2 tsp grated fresh ginger
- 1/4 tsp red pepper flakes
- 1/2 cup cashews

- 6 strips of quality bacon – cooked and crumbled
- 2 cans cream of chicken soup
- 2 cups shredded Monterrey Jack cheese

Roasted Root Vegetables Recipe

Preheat the oven to 390 degrees F (200 degrees C)
- To garnish:
- 2 parsnips
- 2 carrots
- 2 red onions
- 2 beets
- 1 small celeriac
- 1 large waxy potato, such as Opperdoezer Ronde or Yukon Gold
- 1 head of garlic
- Freshly ground black pepper, to taste
- 4 tbsp regular olive oil for drizzling
- Extra virgin olive oil, to drizzle
- Sea salt, to taste
- 1/3 cup chopped flat leaf parsley (15 g)
Rigatoni Pasta Pie

Boil the noodles according to the directions on the box
- 1 lb rigatoni pasta
- 1 lb ground beef (I used ground sirloin)
- 2 garlic cloves (minced)
- 1/4 teaspoon fresh ground pepper
- 1 small jar of spaghetti sauce

- 2 cups grated mozzarella cheese
- 4 oz cream cheese

- 1 can (8 oz) refrigerated crescent rolls
- 3/4 cup chopped pecans
- 1/2 cup sugar
- 1/2 cup corn syrup
- 2 Tbsp butter or margarine, melted

CARAMEL APPLE CAKE

Preheat oven to 300 degrees
- CAKE:
- 2 eggs
- 1 cup vegetable oil
- 1 3/4 cups sugar
- 2 1/4 cups self rising flour
- 1 teaspoon vanilla
- 3 cups chopped apples, peeled
- 1 cup chopped pecans
- 1 teaspoon cinnamon
- CARAMEL ICING:
- 1/3 cup butter
- 2/3 cup dark brown sugar, firmly packed
- 1/3 cup milk
- 3 cups powdered sugar
- 1 teaspoon vanilla
