- 3/4 cup half and half
- 2 cups semisweet chocolate chips
- 2 tablespoons brown sugar
- 2/3 cup of creamy peanut butter
- Salt to taste
- Whipped cream (optional)
Spiced Pumpkin Hot Cocoa

In a saucepan, whisk together the milk, pumpkin puree, cocoa, spices and syrup
- For the hot cocoa:
- 3 cups milk
- 1/2 cup canned pumpkin or pumpkin puree (not pumpkin pie filling)
- 2 tablespoons Dutch process cocoa
- 1/2 teaspoon cinnamon
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 2 tablespoons maple syrup
- For the maple whipped cream:
- 1/4 cup heavy cream
- 2 teaspoons maple syrup
S’mores Cupcakes

Preheat the oven to 350° F
- For the graham cracker crust:
- 11/2 cups graham cracker crumbs
- 1/4 cup sugar
- 5 1/3 tbsp. unsalted butter, melted
- 8 oz. bittersweet chocolate, finely chopped
- For the cake:
- 2 cups plus 2 tbsp. sugar
- 13/4 cups all-purpose flour
- 3/4 plus 1 tbsp. cocoa powder
- 11/2 tsp. baking powder
- 11/2 tsp. baking soda
- 1 tsp. salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp. vanilla extract
- 1 cup boiling water
- For the frosting:
- 8 large egg whites, at room temperature
- 2 cups sugar
- 1/2 tsp. cream of tartar
- 2 tsp. vanilla extract
BLT Salad with Buttermilk Dressing Recipe

1. Preheat oven to 375°
- 8 slices bacon
- half baguette (8 ounces), sliced into 3/4 inch cubes about 4 cups
- 2 tablespoons olive oil
- salt and freshly ground black pepper
- 1/3 cup buttermilk
- 3 tablespoons mayonnaise
- 2 tablespoons apple cider vinegar
- 1 green onion, trimmed and thinly sliced
- 1 pound romaine hearts, coarsely chopped (or other salad greens)
- 1 pint cherry tomatoes, halved
Chipotle Sweet Potatoes (adapted from Bobby Flay at the Food Network)

reheat oven to 375 degrees
- 3 small-medium sweet potatoes, peeled, then cut into pieces sized to fit the food processor
- 1 cup half & half
- 1 cup heavy cream
- 1 heaping TBSP chipotle pepper puree (see below)
- 1 tsp cumin
- 1/2 tsp oregano
- 1/2 cup Monterey Jack cheese
- salt and pepper
Cran Apple Crisps

Getting Ready: Center a rack in the oven and preheat the oven to 375°F
- For the topping
- 3/4 cup all-purpose flour
- 1/2 cup (packed) light brown sugar
- 1/2 cup old-fashioned oats
- 1/2 cup shredded sweetened coconut
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1 stick (8 tablespoons) cold unsalted butter cut into 4 pieces
- For the filling
- 4 medium apples, peeled, cored and cut into 1/4 inch chunks
- 1 cup fresh or frozen cranberries (if frozen, don’t thaw)
- 1/2 cup moist, plump dried cranberries or raisins (dark or golden)
- 2/3 cup sugar
- 1 tablespoon all-purpose flour
Southwestern Ranch Dip

Spicy ranch dip for veggies, onion straws, etc
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1-2 T milk
- 2 T canned jalapeno slices, minced
- 1 T white vinegar
- 2 T minced tomatoes
- 1 T finely minced onion
- 1/2 t dried parsley
- 1/4 teaspoon hot sauce
- 1/4 t salt
- 1/4 t paprika
- 1/2 t dried dill weed
- 1 //4 t cayenne
- 1/2 t cumin
- 1/4 t garlic powder
- 1/4 t ground black pepper
Queso Blanco Serves 4-8

In a medium saucepan heat the oil over medium heat until it shimmers
- 1 teaspoon vegetable oil
- 1/2 cup diced yellow onion
- 1 clove garlic, minced
- 1 jalapeno, seeded and minced
- 1 Serrano chili, seeded and minced
- 1/4 teaspoon cumin
- 2 tablespoons salted butter
- 2 tablespoons flour
- 1 cup milk
- 6 ounces shredded Monterrey jack cheese
- Hot sauce to taste
