Cheese Stuffed Meatballs and Spaghetti

1. Place cheese cubes in resealable freezer plastic bag, seal bag and freeze at least 1 hour
- 4 sticks (1 oz. each) string cheese, cut into 18 (3/4-in.) cubes
- 1/2 c. Italian style bread crumbs
- 1 jar (48 oz.)spaghetti sauce
- 1 1/2 lb. lean ground beef
- 2 tbsp. finely chopped onion
- 1/2 tsp. salt
- 1/2 tsp. dried oregano leaves
- 1 egg
- 12 oz. uncooked spaghetti
- 2/3 c. shredded Parmesan cheese
Italian Ham-Spaghetti

Prep time: 15 minutes Serves: 4
- 2 c. slivered cooked ham
- 1 clove garlic, minced or pressed
- 1 tbsp. butter or margarine
- 1 pkg. (8 oz.) thin spaghetti
- salt
- 1/2 c. grated Parmesan or Romano cheese
- 1/4 c. chopped parsley
- 3 eggs, slightly beaten
- 1/4 c. sliced pitted olives
- black pepper
Pumpkin Streusel Cupcakes

YIELD: 2 DOZEN
- STREUSEL:
- 1 package (18 1/4 ounces) spice cake mix
- 1 1/4 cups water
- 3 eggs
- 1/2 cup canned pumpkin
- 1/2 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1 tablespoon butter
- FROSTING:
- 1 package (8 ounces) cream cheese, softened
- 2 tablespoons butter
- 3 cups confectioners' sugar
- 1/2 teaspoon vanilla extract

Beat eggs lightly, add sugar, salt, nutmeg and mix
- I egg 1 c. buttermilk (or sour milk)
- 1 c. sugar 4 tsp. melted shortening
- 1/2 tsp. salt 1 tsp. baking soda
- 1/2 tsp. nutmeg 2 c. flour
Sloppy Joe Slider

Combine all the ingredients, together
- 1 lb. ground beef
- 3 tablespoons chopped bell pepper (may mix red and green together)
- 1/2 cup prepared sloppy joe sauce (plus more to top sliders when cooked)
- Any of your favorite buns and hamburger toppings.
Creamy Rice Pudding

- 1/2 c. uncooked rice
- 1/4 c. sugar
- 1/4 tsp. nutmeg
- 1/4 tsp. vanilla
- 1 quart milk
- grated lemon rind for garnish

- 1 lb. bulk sausage
- 1/2 c. chopped onion
- 1/4 c. chopped green pepper
- 2 tbsp. flour
- 1/2 tsp. salt
- 1 1/2 c. milk
- 2 c. shredded Cheddar cheese, divided

1. In a large bowl, whisk the eggs, milk, mustard and salt
- 10 eggs
- 2 1/4 cups milk
- 1 1/2 teaspoons ground mustard
- 1/2 teaspoon salt
- 1 pound bulk pork sausage, cooked and drained
- 2 cups cubed white bread
- 1 1/2 cups (6 ounces) shredded
- Cheddar cheese
Savory Italian Meatloaf with Roasted Red Pepper and Ricotta Filling

- 3/4 cup part skim ricotta cheese

- 2 pounds ground beef
- 1/2 cup grated onion

- 1/2 cup milk
- 2 eggs, lightly beaten
- 2 tablespoons tomato paste
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 cup fresh basil leaves, roughly chopped, divided
- 4 roasted red peppers, split open, patted dry, any ribs and seeds removed
- 1 cup tomato sauce
