Mini-Meatball Soup

1. Heat oil in large skillet over medium-high heat
- 2 tsp. olive oil
- 8 oz. sliced fresh mushrooms
- 2 cloves garlic, minced
- 3 c. sliced cabbage
- 2 c. beef stock
- 2 c. chicken stock
- 1 tbsp. tomato paste
- 1/2 c. long-grain rice
- 2 tbsp. fat-free milk
- 6 oz. lean ground beef
- 1 lg. egg
- 1/4 c. grated Parmesan
- 1/2 tsp. dried oregano
- 3 tbsp. chopped fresh parsley
- 1/2 c. roasted red bell peppers, chopped
Creamy Beef Noodle Bake

1. Cook noodles according to package directions
- 2 c. uncooked egg noodles
- 1/2 lb. lean ground beef
- 2 tbsp. finely chopped onion
- 1 can (8 oz.) tomato sauce
- 1/4 tsp. sugar
- 1/8 tsp. salt
- 1/8 tsp. garlic salt
- Dash pepper
- 1/4 c. cream-style cottage cheese
- 2 oz. cream cheese, softened
- 1 tbsp. thinly sliced green onion
- 1 tbsp. chopped green pepper
- 1 tbsp. sour cream
- 2 tbsp. grated Parmesan cheese
Minestrone Grande

1. Soak beans in water overnight and drain
- 1 cup dried cannelini beans
- 2 tbsp. olive oil
- 2 c. chopped onions
- 2 c. chopped celery
- 2 c. baby carrots, halved

- 1/2 tsp. red-pepper flakes
- 5 c. reduced-sodium chicken broth

Hearty Bean Soup

1. Soak beans overnight in enough water to cover them by about 2"
- 1 lb. dried navy beans, rinsed
- 3 c. reduced-sodium chicken broth
- 1 med. onion, finely chopped
- 2 ribs celery, chopped
- 1 carrot, finely chopped
- 4 cloves garlic, minced
- 1 dried bay leaf
- 3 tbsp. tomato paste
- 1 Parmesan rind (optional)
- 1/4 c. chopped fresh parsley + additional for garnish

1. Place a 3 lb. corned beef brisket and contents of spice packet in a Dutch oven with enough water to cover
- 1 corned beef brisket (3 lbs.), cubed
- 1 losf (1 lb.) day old pumpernickel bread, cubed
- 1 3/4 c. sauerkraut, rinsed and well drained
- 8 eggs, beaten
- 3 c. heavy whipping cream
- 1/2 c. Thousand Island salad dressing
- 1 c. (4 oz.) shredded Swiss cheese

- 2 1/2 C. chicken stock, warmed
- 1 yellow onion, diced

- 1 head broccoli, cut into florets and stem thinly sliced
- 2 cloves garlic, chopped
- 1 C. beer
- 1/2 C. + 2 Tbsp. whole milk
- 1 C. shredded sharp Cheddar
- Hot-pepper sauce
- 6 Parmesan crisps (optional)
