Cowboy Chili Over Wagon Wheels

1. Heat large skillet coated with cooking spray over medium-high heat
- 8 oz. lean ground beef
- 3 cloves garlic, minced
- 1 lg. onion, chopped (1 1/2 cups)
- 2 1/2 tbsp. chili powder
- 1 1/2 tsp. dried oregano
- 1 1/2 tsp. cumin
- 2 cans (14.5 oz. ea.) no-salt-added diced tomatoes
- 2 tbsp. Worcestershire sauce
- 1 tbsp. brown sugar
- 1 can (15 oz.)no-salt-added black beans, rinsed and drained
- 6 oz. rotelle pasta
- 1/2 oz. semisweet chocolate
- 1/2 c. shredded part-skim Mozzarella (2 oz.)
- 1/4 c. fat-free plain Greek-style yogurt
Beef Noodle Casserole

1. Cook noodles according to package directions
- 2 c. uncooked egg noodles
- 1/2 lb. lean ground beef
- 1 can (8 oz.) tomato sauce
- 1/4 c. chopped green onions
- 1/4 c. canned chopped green chiles
- 1 sm. clove garlic, minced
- 1/8 tsp. salt
- 2 oz. cream cheese, softened
- 1/2 c. sour cream
- 1/4 c. shredded part-skim Mozzarella cheese
Sweet Potato Soup With Chorizo

1. Heat 1 tsp. of the oil in large skillet over medium heat
- 3 tsp. olive oil
- 2 links fresh chorizo (5-6), removed from casing
- 2 ribs celery, chopped
- 1 med. onion, chopped
- 1 tsp. minced garlic
- 1/2 tsp. cinnamon
- 1/2 tsp. cumin
- 1/4 tsp. nutmeg
- 1/2 c. dry white wine
- 2 apples, peeled and cut into 1/2" cubes
- 2 lb. sweet potatoes, peeled and cubed
- 3 c. chicken stock
- 1/4 c. half-and-half
Roasted Garlic Vegetable Soup

- 1 head garlic, unpeeled
- 1 tbsp. olive oil
- 1 lg. yellow onion, chopped
- 4 c. chicken broth
- 1 1/2 c. diced, peeled russet potatoes
- 2 c. thinly sliced carrots
- 1 tbsp. chopped fresh rosemary
- 1 lg. bunch Swiss chard, stemmed and leaves chopped (about 8 cups)
- 1 can (15 oz.)annellini beans, rinsed and drained
- 1/4 c. fresh basil leaves
