Creamy Baked Fettucini

Preheat the oven to 375 degrees F
- 1 pound fettuccine pasta
- 2 cups grated Asiago cheese, plus 1-1/4 cup
- 2 (8-ounce) containers creme fraiche
- 1 cup grated Parmesan
- 1 1/2 Tbsp. fresh chopped thyme leaves
- 1/2 tsp. salt
- 1/2 tsp. freshly ground
- black pepper
Mac & Cheese

Mix all cheeses. Set aside 1 cup for topping; cover and chill
- 1-1/2 cups coarsely grated Gruyere cheese
- 1-1/2 cups coarsely grated sharp cheddar cheese
- (about 6 ounces)
- 1-1/2 cups diced rindless Brie (cut from 1-pound wedge)
- 5 tablespoons butter, divided
- 1/4 cup all purpose flour

Combine the tomato sauce, vegetable stock, Tabasco and chopped basil in medium saucepan
- 1-1/4 cup pureed tomato sauce
- 3/4 cups vegetable stock + 2 Tbsp. cold stock
- 1/4 tsp. Tabasco sauce
- 3 Tbsp. finely chopped basil
- 1 (1/4oz.) envelope gelatin
- 1-1/2 tsp. toasted coriander seeds
- 3 oz. fresh mozzarella cut into 12 (1") cubes
