Pepper Crusted Lamb Loin

Preheat oven to 450. Place loins in pan and pour balsamic reduction on top and roll around until well coated
- 2 lamb loins (Approx. 1-1/2 lbs.)
- 2 to 4 tbsp mixed & chopped fresh herbs (Thyme, Rosemary, Sage)

Preheat the oven to 450 degrees F
- 1 loaf baguette, cut into 1/2-inch thick slices (about 30 to 36 slices)
- 1/4 cup extra-virgin olive oil
- Salt and freshly ground black pepper
- 5 Roma tomatoes, sliced
- 1 1/4 pounds fresh mozzarella, sliced
- 1 bunch fresh basil leaves, stemmed

Cupcakes: 1. Preheat oven to 325 degrees
- • 1 1/4 cups cake flour (not self-rising), sifted
- • 3/4 teaspoon baking powder
- • 1/2 teaspoon coarse salt
- • 1/4 cup milk
- • 1 vanilla bean, halved lengthwise, seeds scraped and reserved
- • 4 tablespoons (1/2 stick) unsalted butter, room temperature, cut into pieces
- • 3 large whole eggs plus 3 egg yolks, room temperature
- • 1 cup sugar
- • Coffee-Marsala Syrup
- • Mascarpone Frosting
- • Unsweetened cocoa powder, for dusting
- COFFEE-MARSALA SYRUP
- • 1/3 cup plus 1 tablespoon freshly brewed very strong coffee (or espresso)
- • 1 ounce marsala
- • 1/4 cup sugar
- Directions
- 1 . Stir together coffee, marsala, and sugar until sugar is dissolved. Let cool.
- MASCARPONE FROSTING
- Makes about 2 cups
- • 1 cup heavy cream
- • 8 ounces mascarpone cheese, room temperature
- • 1/2 cup confectioners' sugar, sifted

1. Fill a large bowl with cold water and place clams in the water (they should be covered)
- 3 dozen manila or littleneck clams (about 1 1/2 pounds)
- 1 pound linguine
- 2 tablespoons olive oil
- 8 to 10 ounces good-quality Mexican chorizo, casing removed
- 2 medium shallots, finely chopped
- 4 medium garlic cloves, finely chopped
- 3/4 cup vodka
- 1/4 cup finely chopped fresh Italian parsley
