Lamb and Eggplant Shepherd's Pie

This Greek-inspired shepherd's pie is made with lamb, eggplant, and oregano
- FILLING
- 1 1-1/2-pound eggplant, unpeeled, cut into 3/4- to 1-inch cubes
- Coarse kosher salt
- 7 tablespoons (or more) extra-virgin olive oil, divided
- 2 pounds well-trimmed boneless lamb shoulder, cut into 1-inch cubes
- All purpose flour
- 3 cups chopped onions
- 1 cup dry white wine
- 1 28-ounce can diced tomatoes in juice
- 1-1.2 cups beef broth (preferably organic)
- 8 garlic cloves, chopped
- 1 tablespoon dried oregano
- TOPPING
- 2 1/2 pounds russet potatoes, peeled, cut into 1-inch cubes
- 2 tablespoons (1/4 stick) butter
- 2 tablespoons extra-virgin olive oil
- 2 garlic cloves, minced
- 3/4 cup whole milk
- 1 1/4 cups (packed) coarsely grated kasseri cheese* (5 to 6 ounces) can use feta or goat cheese
- *A firm white cheese made from sheep's milk; available at many supermarkets and at Greek markets and some Italian markets.
Lemon-Oregano Roasted Potatoes

1. Heat the oven to 450°F and arrange a rack in the middle
- 4 large russet potatoes, cut lengthwise into sixths
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup olive oil
- 1/4 cup water
- 4 teaspoons dried oregano
- 4 teaspoons kosher salt
- 2 teaspoons lightly packed lemon zest
- 1/4 teaspoon freshly ground black pepper
Fried Filet of Sole w/Brandy Butter

Wash and thoroughly dry the sole
- Sauce:
- 1-1/2 lbs. fillet
- 1/4 tsp. salt
- 1/4 tsp. celery salt
- pepper
- 1/4 cup dry white wine
- 2 tbs. brandy
- 1/4 cup water
- 2 egg yolks beaten
- 1 cup instant disovling flour
- 2 egg whites beaten stiff
- 2 sticks unsalted butter
- 2 Tbsp. olive oil
- juice of 2 lemons
- 1 Tbsp. Worscheshire sauce
- 3 dashes hot sauce
- 1 Tbsp. capers
Lemon Roasted Chicken With Carrots and Potatoes

Preheat oven to 350°F. Remove giblets from cavity of chicken
- 1 lb thick carrot, peeled and cut into 1 inch pieces
- 1 1/2 lbs red potatoes or yukon gold potatoes, scrubbed and cut into 1-1/2 inch pieces
- 1 whole chicken, 3 to 4 lbs
- salt
- fresh ground black pepper
- 2 small lemons
White Bean Cassoulet

Heat the oil in a medium stock pot
- Spinach Pesto:
- 1/2 cup olive oil
- 10 cloves garlic, diced
- 1 medium white onion, diced
- 2 carrots, diced
- 4 stalks celery, diced
- 1 herb bouquet tied with kitchen string: 4 stems fresh rosemary, 8 stems fresh oregano, 10 stems fresh thyme
- 1 dried bay leaf
- 2 cans cannellini beans, or 3 cups prepared white beans
- 2 quarts chicken stock
- 4 links spicy cooked chicken Italian sausage, sliced, recipe follows
- 1/2 cup Spinach Pesto, recipe follows
- Garlic-Parmesan Crostini, recipe follows
- 1/2 pound spinach leaves
- 5 cloves garlic, smashed and minced
- 1/2 cup toasted pine nuts

- 3/4 cup dry white wine
- 1 28oz can chopped tomatoes w/juice
- 3/4 cup chicken broth
- 3 Tbsp. drained capers
- 1/4 cup coarsely chopped fresh basil
Lemon-Thyme Martini
