Pepita Crusted Pacific Halibut with Cilantro Serrano Cream

Season all sides of the halibut with the 1 teaspoon of salt and 1 teaspoon of pepper
- 4 (6-ounce) portions halibut fillets, skin removed
- 1 1/2 teaspoons freshly cracked black pepper
- 1 1/2 teaspoons sea salt
- 1/2 cup all-purpose flour
- 2 eggs, lightly beaten
- 1 cup pepitas
- 1/4 cup canola oil
- Cilantro Serrano Cream, recipe follows
- 2 tablespoons unsalted butter
- 1/4 cup minced shallot
- 1 teaspoon seeded, minced serrano pepper
- 1 cup half-and-half
- 1 cup roughly chopped cilantro leaves
- 1 tablespoon fresh lime juice
- 1/2 teaspoon sea salt
Rosie Buttermilk Biscuits

- 2 cups Self-rising flour
- 2 tablespoons cold bacon fat
- 1 cup cold buttermilk (full fat)

Broccoli Beef Stir Fry

Combine all marinate ingredients in a gallon sized ziplock bag
- 1/2 cup vegetable or canola oil
- 1/3 cup reduced sodium soy sauce
- 1/4 cup balsamic vinegar
- 2 tablespoons fresh lemon juice
- 1 clove garlic, minced
- 1 tablespoons dijon mustard
- 2 tablespoons worcestershire sauce
- 1/2 teaspoon black pepper
- 1 pound flank steak
- 1 pound marinated flank steak, cut into very thin strips
- 4 cups broccoli florets, cup into bite-sized pieces
- 1/2 of a small onion, diced
- 2 gloves garlic, minced
- 3 tablespoons cornstarch, divided
- 1/2 cup water
- 2 tablespoons vegetable oil, divided
- 1/3 cup reduced sodium soy sauce
- 2 tablespoons light brown sugar
- 1/4 teaspoon ground ginger
- 1 tablespoon chopped fresh cilantro

- 1 avocado
- 1 tablespoon chipotle sauce (Tabasco or Louisiana)

Apple Bread Pudding with Caramel Dessert Sauce

- Nonstick cooking spray or butter, for greasing
- 2 cups heavy cream
- 2 cups whole milk
- 3/4 cup light brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 9 large egg yolks
- 3 1/2 cups Granny Smith apples, peeled and chopped
- 3/4 cup pecans, chopped and toasted
- 1 loaf challah bread, cut or torn into 1-inch pieces (preferably stale)

- 3/4 cup sugar
- 1/2 cup butter
- 1/2 buttermilk
- 1 tablespoon light corn syrup

Stove Top Mac and Cheese

In a large stockpot, cook pasta according to package directions
- 16 oz pipette pasta or other small pasta shapes
- 4 tbsp unsalted butter
- 1/3 cup all-purpose flour
- 2 1/2 cups milk, heavy cream, or half-and-half
- 4 oz white American cheese, chopped or torn into pieces
- 8 oz extra sharp white Vermont cheddar, shredded
- 2 tsp – 1 tbsp Dijon mustard (adjust according to your tastes)
- 1 tsp Kosher salt
- 1/4 tsp hot sauce (like Frank’s)
Miso Sweet Potato and Broccoli Bowl

Heat oven to 400 degrees. Place rice or grain and cooking liquid in a rice cooker or on the stove
- For the bowl
- 1 cup dried rice or another cooking grain of your choice
- 1 to 2 sweet potatoes (about 1.5 pounds)
- 1 large bundle broccoli (about 1 pound)
- 1 to 2 tablespoons olive oil
- Coarse or kosher salt
- Freshly ground black pepper
- 1 teaspoon white sesame seeds
- 1 teaspoon black sesame seeds
- For the miso-sesame dressing
- 1 tablespoon minced fresh ginger
- 1 small garlic clove, minced
- 2 tablespoons white miso (the mildest kind)
- 2 tablespoons tahini (other nut butters can work in a pinch)
- 1 tablespoon honey
- 1/4 cup rice vinegar
- 2 tablespoons toasted sesame oil
- 2 tablespoons olive oil

- 3/4 cup cake flour
- 1/3 cup milk
- 2 egg whites
- 3/4 teaspoon vanilla extract

- 1/3 teaspoon salt
- 1/2 stick unsalted butter
- WHITE CHOCOLATE FILLING:
- 42 grams white chocolate, chopped
- 1/2 cup heavy cream
- LEMON CREAM:
- 1/2 cup sugar
- Zest of 1 1/2 lemons, finely chopped
- 2 large eggs
- 3/8 cup freshly squeezed lemon juice
- 10 1/2 tablespoons unsalted butter, diced and softened
