White Chocolate Lemon Truffles

- 1 cup white chocolate
- 5 Tbsp. unsalted butter
- 3 Tbsp. heavy cream

- 1 tsp. lemon extract

In a pot, melt the butter over medium heat, add the green onion whites, and garlic, and sweat until tender

- Bunch green onions, whites portion only, smashed and coarsely chopped
- 1 clove garlic, chopped
- 1 teaspoon saffron threads
- 2 cups parboiled (long grain) rice
- 4 cups water

- 1/2 cup all-purpose flour

- 1/4 cup granulated sugar
- 2 tablespoons molasses
- 11/2 cups canned pumpkin puree
- 11/4 teaspoons ground cinnamon, plus more for the top
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon fine salt
- 1 cup heavy cream
- 1/2 cup whole milk
- 1/2 vanilla bean, split lengthwise, seeds scraped out and reserved, or 2 teaspoons pure vanilla extract
