Salted Pretzel Caramel Brownies

- Ingredients
- 1 box Betty Crocker fudge brownies (for a 9x13 pan)
- 2 eggs
- 1/4 cup water
- 2/3 cup vegetable oil
- 3 cups pretzels
- 1 jar caramel sauce
- coarse sea salt

1. Heat 2 tablespoons olive oil in a large saucepan; add the onion and garlic and sauté until translucent

- ½ Onion, chopped
- 2 garlic cloves, minced

- 1 Large Eggplant, sliced lengthwise to ¼ inch slices

Chicken Wild Rice Casserole

- 1 box Uncle Ben's wild rice- cook by directions on box
- 2 cups cooked chicken
- 1 can French style green beans, undrained
- 1 2 oz jar pimento, undrained
- 1 large jar sliced mushrooms
- 1/2 cup mayo
- 1 can cream of celery
- salt and pepper
Fresh Corn, Tomato and Mozzarella Salad

View One Step at a Time Step 1 Cut corn off the cob, place into a medium mixing bowl
- 4 ears fresh corn on the cob, cleaned and washed
- 1 (10.5 oz) package grape tomatoes, halved
- 8 oz fresh mozzarella, cut into bite-size pieces
- 10 leaves fresh basil, chiffonade (roll leaves and slice thinly)
- 1/4 cup fresh lemon juice
- 1/4 cup extra virgin olive oil
- 2 garlic cloves, minced
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper, coarsely ground
HOT CORN DIP

First, chop all of your vegetables to 1/2" or smaller
- 1 1/2 Tablespoon butter
- 2 cups corn (can use frozen)
- 1/2 red onion, chopped
- 2-3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 jalapeno, optional, chopped and deseeded
- 4 oz cream cheese
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup Dr Pepper
- 2 oz green chiles (half a can)
- 2 green onions, chopped
- 2 cups shredded cheese
- 2 teaspoons taco seasoning, optional

Cook macaroni according to package; drain
- 3 1/2 oz. pkg. elbow macaroni (1 cup)
- 3/4 cup milk
- 1 10 3/4 oz. cream of chicken soup
- 2 cups chopped chicken
- 1 cup shredded cheese
- 1 4 oz. can mushroom pieces, drained
- 1/4 cup chopped pimento
Old Fashioned Macaroni Salad

In a large serving bowl, whisk together the dressing ingredients; set aside

- 1/2 cup of mayonnaise (Duke's recommended)
- 2 tablespoons of pickle juice or vinegar
- 1 tablespoon of granulated sugar
- 1 tablespoon of Creole or other spicy brown mustard
- 1/2 teaspoon of kosher salt
- Salad:
- 2 cups of dry elbow macaroni
- 1 teaspoon of olive oil
- 1 cup of chopped sweet onion
- 1/4 cup of chopped celery
- 1 (2 ounce) jar of pimentos, drained
- 1/8 cup of chopped pickles, sweet or dill
- 1/4 cup of pickle juice, optional
- Kosher salt and freshly cracked black pepper, to taste

- 2 Vidalia onions
- 4 tablespoons butter
- 1 cup cornmeal
- 3/4 cup all purpose flour
- 1 1/2 teaspoons kosher salt
- 1/3 cup sugar
- 1 tablespoon baking powder
- 8 oz. frozen broccoli-thawed
- 1/2 cup cooked chopped bacon
- 3 eggs
- 16 oz cottage cheese
