Leftover Mashed Potato Puffs

Preheat oven to 400 degrees F
- 2 eggs
- 1/3 cup sour cream, plus more for serving
- 1 heaping cup shredded sharp cheddar cheese
- 2 tablespoons grated Parmesan
- 2 tablespoons chopped chives
- salt and black pepper, to taste
- 3 cups mashed potatoes
Mediterranean Style Stuffed Peppers

Instructions In a medium heavy pot, heat 1 tbsp of oil
- Good quality cooking oil or olive oil
- 1 small yellow onion, chopped
- 1/2 lb ground beef
- salt + pepper
- 1/2 tsp allspice
- 1/2 tsp garlic powder
- 1 cup cooked or canned chickpeas
- 1/2 cup chopped parsley, more for garnish
- 1 cup short grain rice, soaked in water for 10-15 minutes, drained
- 1/2 tsp hot paprika
- 3 tbsp tomato sauce
- 2 1/4 cup water
- 6 bell peppers, any colors, tops removed, cored
- 3/4 cup chicken broth (or water)

When ready to serve, you can throw this on a bed of brown rice or even quinoa, and you can also add in more veggies...
- 1 tablespoon vegetable oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
- Kosher salt and freshly ground black pepper
- 1/2 teaspoon sesame seeds
- 2 tablespoons chopped fresh cilantro leaves
- 1 tablespoon cornstarch
- 1/2 cup honey
- 2 cloves garlic, minced
- Juice of 1 lemon
- 2 tablespoons reduced sodium soy sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon sesame oil
- 1 teaspoon Sriracha, optional
- 1 jalapeno, thinly sliced
Mexican Stuffed Shells

Brown ground beef and add taco seasoning according to directions
- Large pasta shells
- 1 lb. ground beef
- taco seasoning
- 1 can black beans
- 12 -jar picante sauce 1/2 cup water
- 8 oz. tomato sauce
- 4 oz chopped green chilies
- 1 cup shredded cheese
ONE POT BEANS, CHICKEN AND RICE

Heat olive oil in a large stockpot or Dutch oven over medium heat
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken thighs, cut into 1-inch chunks
- Kosher salt and freshly ground black pepper
- 2 cloves garlic, minced
- 1 jalapeno, minced
- 2 cups vegetable broth
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can whole kernel corn, drained
- 2 cups instant white rice
- 2 Roma tomatoes, diced
- Juice of 2 limes
- 2 teaspoons lime zest
- 1/4 cup chopped fresh cilantro leaves
- Kosher salt and freshly ground black pepper, to taste.
Chipotle Chicken Pasta

Be sure to remove the adobo seeds or it will be TOO HOT to eat
- 1 tsp. extra virgin olive oil
- 1 lb. chicken breast, cut in bite-sized pieces
- 1 tablespoon taco seasoning
- 1 red bell pepper, sliced
- 3 garlic coves, minced
- 1 1/2 teaspoons cornstarch
- 1/2 cup low-fat, low sodium chicken broth
- 1 chipotle pepper in adobo sauce, seeds removed and minced
- 1 teaspoon of adobo sauce
- 1/4 cup light cream cheese
- 1/2 cup nonfat Greek yogurt, such as Fage Total
- 1 cup whole wheat pasta (dry) – I used elbows
- 1 tablespoon cilantro, chopped
- 1/4 cup parmesan cheese, optional
- Cook pasta according to directions.
Baked Stuffed Shrimp

- 1/2 red pepper
- 1/2 green pepper
- 1 small onion
- 1 can crab meat
- 1 tube Ritz crackers
- 1 stick melted butter
- 2 lb. large shrimp, cleaned & butterfly
Cranberry Pecan Stuffing (slow cooker)

Preheat oven to 400 degrees F
- 1 (12-count) package KING'S HAWAIIAN Original Hawaiian Sweet Dinner Rolls, cubed
- 1 tablespoon olive oil
- 1 leek, thinly sliced
- 2 stalks celery, diced
- 2 carrots, peeled and diced
- 1/2 teaspoon dried sage
- 1/2 teaspoon dried thyme
- Kosher salt and freshly ground black pepper, to taste
- 1 pound Italian sausage, casing removed
- 1/2 cup dried cranberries
- 1/2 cup raw pecan halves
- 2 cups chicken stock, or more, as needed
- 1/4 cup unsalted butter, melted
- 2 tablespoons chopped fresh parsley leaves
Asian Pear and Arugula Salad with Goat Cheese

In a small bowl, whisk the olive oil with the lemon juice, honey, and chopped thyme
- 1/4 c. extra-virgin olive oil
- 2 tbsp. fresh lemon juice
- 1 tsp. honey
- 1/2 tsp. chopped thyme
- Salt and freshly ground pepper
- 5 oz. baby arugula
- 3 Asian pears
- 1/2 c. salted roasted pumpkin seeds
- 3 oz. fresh goat cheese
- Sea salt
No Bake Eclair Cake

- 1 package (1 lb.) graham crackers
- 2 small french vanilla instant pudding (3.4 ounces each)
- 3 1/2 cups milk (I used skim)
- 8 oz. Cool whipIngredients for the frosting:3 tablespoons of Cocoa
- 1 1/2 cups powdered sugar
- 3 tablespoons of butter (room temperature)
- 3 tablespoons of warm milk
