Banana Bran Muffins

A batch of Bran Muffins that stay moist after the first day!
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/4 cup sugar
- 1/4 teaspoon cinnamon
- 2 cups Raisin Bran Cereal
- 1/3 cup fat-free milk
- 2 mashed fully ripe bananas
- 2 egg whites
- 1/4 cup butter, melted & cooled
- 1/4 cup raisins

Mango Crab Salad Wonton Cups

A quick and easy appetizer, perfect for the summertime
- For the Wonton Cups:
- Cooking spray
- 18 wonton wrappers, thawed if frozen (we used potsticker wrappers)
- 2 teaspoons canola oil
- 1/4 teaspoon salt
- For the dressing:
- 1 teaspoon lime zest
- 2 tablespoons fresh lime juice
- 1/4 teaspoons salt
- 1/8 teaspoon black pepper
- 1/2 teaspoon dried hot red pepper flakes
- 2 tablespoons olive oil
- For the salad:
- 1/2 pound lump crabmeat, picked over (we used flaked crab but I suggest trying with lump)
- 1 stalk celery, finely diced (we omitted the celery)
- 1/2 cup finely diced mango
- 1/4 cup thinly sliced scallions
- 2 tablespoons coarsely chopped fresh cilantro leaves
- Sweet Chili Sauce (optional)
Slow Cooker BBQ Pulled Pork

An easy and tasty way to make pulled pork
- 2 pounds pork tenderloin, trimmed
- salt & pepper, to taste
- 1 (12 oz) can of root beer
- sweet onion, cut into 5 rings 1/2” wide (reserve remainder of onion for other use)
- 1 bottle Sweet Baby Ray's BBQ Sauce (or your own favorite)
- toasted kaiser buns, makes about 6-8 sandwiches depending on bun size
Peanut Butter Chocolate Chip Biscotti

Crunchy and sweet, these peanut butter chocolate chip biscotti are perfect with a cup of coffee
- 2 cups all purpose flour (can substitute 1 cup all purpose, 1 cup whole wheat)
- 1 teaspoon baking powder
- 1 /2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup reduced fat peanut butter
- 1/2 cup sugar
- 1/2 cup packed golden brown sugar
- 1 large egg
- 2 large egg whites
- 2 teaspoon vanilla
- 1/4 - 1/2 cup of mini chocolate chips
Mango & Black Bean Salad

Combine all ingredients in a large bowl
- 1 1/2 cups chopped, ripe mango
- 1/2 cup cooked wild rice
- 3 tablespoons chopped fresh cilantro
- 2 tablespoons fresh salsa (I used peach mango salsa)
- 2 tablespoons fresh lime juice
- 1 tablespoon extra virgin olive oil
- 3/4 teaspoon Kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon red pepper flakes (use more if you like heat)
- 1 15 oz. can black beans, drained & rinsed
Moroccan Spiced Chicken

1. Combine spices in small bowl and set aside
- 1 1/4 teaspoons sweet paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground cinnamon
- 2 tsp fresh lemon zest
- 3 tablespoons fresh lemon juice , from 1 to 2 lemons
- 5 medium cloves garlic , minced or pressed through garlic press (about 5 teaspoons)
- 1 whole chicken, cut into 8 pieces (I used about 1.5 lbs of boneless skinless chicken)
- salt & pepper, to taste
- 1 tablespoon olive oil
- 1 large onion , halved and cut into 1/4-inch slices (about 3 cups)
- 1 3/4 cups low-sodium chicken broth
- 1 tablespoon honey
- 1 medium carrot , peeled and cut crosswise into 1/2-inch-thick coins
- 1 cup dried apricots , halved (I used about 1/2 cup raisins)
- 1 (15 ounce) can chickpeas , drained and rinsed
- 2 tablespoons chopped fresh cilantro leaves
Cinnamon Bread Pudding with Warm Vanilla Bourbon Sauce

1. Preheat oven to 350 degrees F (175 degrees C)
- 8 slices cinnamon raisin bread cubes, crusts removed (an equivalent amount of day old whole wheat baguette works well too)
- 1/4 cup raisins
- 1 tbsp butter
- 1/2 cup mini chocolate chips
- 3/4 cup brown sugar
- 1/4 cup sugar
- 1 cup low fat evaporated milk
- 3/4 cup skim milk
- 1/4 cup butter
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 2 eggs, beaten
- dash of rum
- Warm Vanilla Bourbon Sauce
- 1 tablespoon butter
- 1 teaspoon ground cinnamon
- 1/4 cup sugar
- 1/2 cup milk and 3 tbsp milk mixed with 2 tsp cornstarch
- 1 tablespoon Bourbon whiskey
- 1 tablespoon vanilla
