- 12 cups water
- 1 lb (2 1/2 cups) dried black beans, picked over and rinsed
- 1 smoked ham hock, rinsed
- 1 medium green bell pepper, cored, seeded, and quartered
- 1 medium onion, minced
- 6 medium garlic cloves, minced or pressed through a garlic press (about 2 tablespoons)
- 2 bay leaves
- 1 1/2 teaspoon salt
- Sofrito:
- 2 tablespoons extra-virgin olive oil
- 1 medium onion, minced
- 1 small green pepper, cored, seeded and minced
- 8 medium garlic cloves, minced or pressed through a garlic press (about 3 tablespoons)
- 2 teaspoons dried oregano
- 3/4 teaspoon salt
- 1 1/2 teaspooons ground cumin
- 1 tablespoon juice from 1 lime
- 1/2 cup chopped fresh cilantro leaves
