Chocolate Caramel Brownies

Preheat the oven to 350˚ F
- For the brownies:
- 1 cup (2 sticks) butter
- 12 ounces bittersweet or semisweet chocolate, coarsely chopped
- 1 1/2 cups sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1 1/2 cups pecans, coarsely chopped (optional, I didn't use any)
- 1 cup semisweet chocolate chips
- For the caramel filling:
- 14 ounces caramel candies, unwrapped
- 1/4 cup heavy cream

- 1 lb plus 1 oz ground chuck
- 1 1/2 oz oat bran
- 1 lg egg, lightly beaten
- 1/2 t ground allspice
- 3 T light brown sugar
- 2 T cornstarch
- 1 c drained, canned peach slices (in juice - NO sugar added - reserve 1/2 cup of the juice)
- 1/4 c cider vinegar
- 1/4 c ketchup
- 1 T soy sauce
- 1/4 c sliced scallions
- 1 garlic clove - minced
- 1/4 c grated carrots
