Los Patios Soup

Sauté carrots, celery, and green onion in butter
- 6 carrots, sliced
- 4 celery stalks, sliced
- 1 bunch green onions, chopped
- 1 stick butter
- 2 cans chicken broth
- 3 cans cream of potato soup
- 1 cup milk
- 8 oz. grated cheddar or Colby
- 8 oz. sour cream
- 1/4 cup chopped parsley
- approx. 1 cup broken Rotini multicolored pasta, cooked and drained
Easy Taco Casserole

This is one of my family's faves! I always have to make a double recipe, and it gets devoured!
- 1 pound ground beef
- 1 cup salsa
- 1/2 cup mayonnaise
- 2 tsp. chili powder
- 2 cups crushed tortilla chips
- 1 cup (4 oz.) shredded Colby cheese
- 1 cup (4 oz.) shredded Monterey Jack cheese
- 1 medium tomato, chopped
- 2 cups shredded lettuce

- 1 beef chuck roast (3 pounds), trimmed
- 2 cups water
- 1/2 cup soy sauce
- 1 tsp. dried rosemary
- 1 tsp. dried thyme
- 1 tsp. garlic powder
- 1 bay leaf
- 3 to 4 whole peppercorns
- 8 French rolls, split

- 2 cups water
- 1 1/2 tsp. Italian seasoning
- 1 tsp. salt (optional)
- 1 tsp. beef bouillon granules
- 1/2 tsp. sugar
- Pepper to taste
- Shredded Parmesan cheese, optional

Put this in the crock pot in the morning, and serve with cole slaw and potato chips for a quick, delicious meal!
- 1 small chuck roast
- 1 can beef broth
- 2 packages “Good Seasons” Italian Salad dressing mix
- 3-4 pepperoncini peppers (in a jar)
- 2-3 Tablespoons pepperoncini juice
Stuffed Green Pepper Soup

This is a great soup, especially if you like stuffed peppers
- 1 lb. Ground beef
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 14 oz. can tomato sauce
- 14 oz. can diced tomatoes
- 2 cups sliced green peppers
- 1 cup well-cooked rice
- 1 beef bouillon cube
- 1 tsp. salt
- 1 tsp. pepper
- couple of pinches brown sugar
- 1/4 to 1/2 tsp. garlic powder
- 1/4 to 1/2 tsp. Nature’s Seasons (a spice by Morton’s)
- 1/4 tsp. Greek Seasoning

This is one of the best gluten-free all purpose blends that I know of so far
- 6 cups white rice flour
- 3 cups tapioca flour
- 1 1/2 cups potato starch
- 1 T. salt
- 2 T. xanthan gum
Chicken Rice Bake

Mix rice, mushroom soup, cream of chicken soup, milk, and butter together in saucepan and heat until butter melts

- 1 can mushroom soup
