This recipe was adapted from a chili recipe by Paula Deen's son, Jamie

  • 1 lb. ground beef
  • 1 lb. hot ground sausage
  • 1 med. onion, diced
  • 2 cloves garlic, minced
  • 1 small green pepper, diced
  • 1 28 oz. can diced tomatoes
  • 1 can whole, peeled tomatoes
  • cumin (to taste)
  • 1 T. chili powder
  • 1 can chili beans
  • 1 can black beans
  • 1 can kidney beans
  • 1 8-oz. can tomato sauce
  • 1 package chili seasoning mix or 2 tablespoons homemade chili seasoning mix
  • 2 cups chopped celery
  • shredded cheddar
  • sour cream (optional)
  • chopped green onions (optional)

  • 1 large head cauliflower, broken into florets
  • 1/3 cup butter
  • 1 T. lemon juice

Kickin' Chicken Soup

A delightful Mexican-type soup! If you want more kick, just add more ground red pepper!

  • 2 large boneless chicken breasts (can also use cooked, deboned chicken breasts)
  • 3 Tablespoons Canola oil
  • 3 cloves garlic, minced
  • 1 large onion, chopped
  • 1 jalapeno pepper, chopped (can also use 2 tablespoons chopped jalapenos from a jar)
  • 1 carton (32 oz.) low-sodium chicken broth (I use 4-5 cups of reserved broth from cooking the chicken)
  • 3 cups fresh or frozen corn kernels
  • 1 can (15 1/2 oz) black beans
  • juice of one lime
  • 1 tsp. Salt or to taste
  • 1/2 tsp. Ground red pepper or hot sauce
  • freshly ground black pepper
  • 1/2 cup minced cilantro
  • shredded Monterey Jack cheese, tortilla chips
