BEST Fried Rice

The BEST Fried Rice. This fried rice is loaded with veggies and only takes 20 minutes to make!
- 2 2 2 tablespoons butter, divided
- 3 3 3 eggs, whisked
- 2 2 2 medium carrots, small dice
- 1 1 1 small onion, small dice
- 3 3 3 cloves garlic, minced
- 1 1 1 cup frozen peas, thawed
- 4 4 4 cups cooked and chilled rice, (I either use white or brown rice)
- 4 4 4 TBL Braggs Liquid Aminos
- sliced green onions for garnish, if desired
Green Bean and Potato Casserole

Combine meat with tomato soup and put on the bottom of a baking dish
- 1 lb. hamburger cooked and seasoned (I like to add onion salt while I cook the meat)
- 4 cups green beans (cooked)
- 1 can tomato soup
- 4 cups mashed potatoes (or however much you like)
- 2 cups shredded cheddar cheese
Bon Appetite Veggie Dip

Mix and refridgerate
- 1 Tbl. Bon appetite
- 1 Tbl. dill weed
- 1 cup sour cream
- 1 cup mayonnaise
Homemade Fresh Lime Dressing

- 1 C sugar
- 1/4 C water
- 1 Tsp Lime Zest
- Juice of 2 limes
Barbershop Dessert - Annette

Blend as for pie crust the flour,margarine and pecans: Pat into 9x13
- 1 cup flour
- 1 or 1 1/2 cup chopped pecans
- 1/2 cup margarine
- 8 oz cream cheese
- 1 cup powdered sugar
- 13 oz carton cool whip
- 1 sm pkg vanilla pudding mix
- 1 sm pkg chocolate pudding mix
- 3 1/2 cups milk
Corn Bread - Aunt Betty

Melt ½ cup butter. Add and stir well ½ cup sugar
- 1/2 cup butter
- 1/2 cup sugar
- 2 eggs
- 1 cup buttermilk
- 1/2 tsp baking soda
- 1 cup flour
- 1 cup yellow corn meal

- 2 pkgs. Cherry Kool-Aid 1 cup sugar
- 2 12-oz. cans grape juice Concentrate
- 2 cups pineapple juice
Crunchy Curried Chicken Salad

This salad is perfect for warm evenings when you don't want to heat up the kitchen
- 1/2 cup (125 mL) whole cashews
- 1/2 cup (125 mL) sweetened flaked coconut
- 1 tbsp (15 mL) curry powder
- 2 tbsp (30 mL) mango chutney
- 1/2 cup (125 mL) plain yogurt
- 3 cooked boneless, skinless chicken breasts (about 3 cups/750 mL diced)
- 2-3 green onions with tops
- 1 large Granny Smith apple
- 4 cups (1 L) mixed baby greens
Rigatoni

Boil 1 box rigatoni until tender then add sauce to pasta and serve with parmesan cheese over top
- 12 oz. Italian sausage – fry 20 minutes
- 24 oz. spaghetti sauce – add to sausage and simmer 5 min.
- Add 1/4 cup cream. (milk will do in a pinch)
Mango Vinaigrette

- 1/2 C mango nectar (from 12.5 oz. can)
- 4 Tbs white wine vinegar
- 2 Tbs freshly squeezed lime juice
- 2 Tbs freshly squeezed orange juice
- 2 Tbs honey
- 2/3 C olive oil
