- 1/2 cup cocoa powder
- 1/2 cup sugar
- 1/2 cup brewed coffee
- 1 1/2 oz bittersweet chocolate (50-70 %) finely chopped
- Ice Cream Base:
- 2 cups whole milk
- 4 teaspoons cornstarch
- 1 1/2 oz (3tablespoons) cream cheese,
- softened
- 1/8 teaspoon salt
- cold water & ice as needed
- 1 cup heavy cream
- 1/2 cup sugar
- 2 tablespoon light corn syrup
Butterflied Chicken Dijon Grilled on a Bed of Thyme

A flattened chicken looks impressive, but looks aren’t the only benefit to butterflying
- 1 3-1/2- to 4-lb. chicken (I prefer organic)
- 1/4 cup Dijon mustard
- 2 scallions (both white and green parts), thinly sliced
- 2 Tbs. unsalted butter, softened
- 1/2 tsp. dried herbes de Provence
- 1/4 tsp. paprika, preferably smoked sweet Spanish (pimentón)
- Kosher salt
- Extra-virgin olive oil, for brushing
- 4 bunches (about 2 oz. total) fresh thyme, soaked in water for at least 30 min.

- Cake:
- Vegetable spray for the pan
- Flour to dust the pan
- 1 (18.25 oz) plain yellow cake mix (I use chocolate)
- 1 (5.9 oz) chocolate instant pudding
- 1 cup vegetable oil
- 3/4 cup water
- 1/2 cup sugar
- 4 large eggs
- 1/4 cup Kahlua
- 1/4 cup vodka
- Glaze:
- 1/2 cup powdered sugar, sifted
- 2 tablespoons Kahlua
