Homemade Creamed Corn Recipe
- 1/2 onion, diced
- 1 tablespoon butter
- 2 pinches kosher salt
- 8 ears fresh corn (or 4 cups frozen corn)
- 1 sprig fresh rosemary, bruised (a bit of crushed dry Rosemary works)
- 1 tablespoon sugar
- 1/4 teaspoon turmeric
- 2 tablespoons yellow cornmeal
- 1 cup heavy cream (We used 1/2 coffee cream - 18% and 1/2 whipping cream - 35%)

- 4 or 5 Jalapeno or other hot peppers ( I wanted it hot so used 14 oz. of jalapeno peppers and 2 cayenne peppers)
- 4 medium green or red bell peppers ( I used 11 oz bell peppers)
- 1 cup white vinegar (5%)
- 5 cups sugar
- 1 pouch liquid pectin (Must be liquid)
- 1-2 drops green food coloring

- 1 cup sour cream (14% works best)
- 1/4 cup of sugar
- 2 tbsp distilled white vinegar
- 1 tsp dill weed dried (or a couple Tbsp fresh- chopped)
- 1/2 tsp salt
- 1/2 tsp black pepper(ground)
- 4 large cucumbers
- 1 sweet onion (thinly sliced)
The BEST Homemade Canned Tomato Sauce

Wash and cut the tomatoes (1/2 or 1/4) and put in large stockpot Add the ingredients and mix with wooden spoon
- 26 - 30 lbs tomatoes (preferably Roma or similar "paste" tomato)
- 1 cup olive oil
- 1/2 to 3/4 cup red wine
- 1/3 cup dried herbs (whatever you like - I used - 2 tsp. rosemary, 2 tsp. sage, 2 tbsp oregano, 2 tbsp basil)
- 6 to 7 large garlics smashed
- 4 - 6 large bay leaves
- Salt to taste (about 2 tbsp)
- 1 cup lemon juice (Real Lemon)

- 3 3 3 cups of onions, chopped (3 medium whole)
- 2 2 2 large green pepper (cored and seeded)
- 4 4 4 cayenne (one batch I used eight for a little extra heat)
- 8 8 8 hot chili peppers
- 10 10 10 jalapeno pepper
- 4 4 4 cloves of garlic, finely chopped
- 2 12 2 12 2 - 12 ounce cans of tomato paste
- 2 2 2 cups bottled lemon or lime juice
- 1 1 1 tbsp. of salt
- 1 1 1 tbsp of sugar
- 1 1 1 tsp. black pepper
