1. Bake the cakes. Heat the oven to 350 degrees

- 1 cup all-purpose flour
- 3/4 cup sugar
- 1 1/2 teaspoons baking powder

- 1 14-ounce can evaporated milk
- 1 14-ounce can sweetened condensed milk
- 1/2 cup freshly brewed espresso or strongly brewed coffee
- 1 teaspoon vanilla extract, preferably Mexican
- 1/4 teaspoon cinnamon, preferably freshly ground Mexican canela
- 1 cup sugar
- 5 egg whites at room temperature
- 1/2 teaspoon cream of tartar
- 1/2 cup shaved Mexican chocolate
