- 2 pounds boneless rump or rib roast
- kosher salt and pepper
- 1 pint grape tomatoes
- 1 head garlic, cloves peeled
- 8 sprigs fresh thyme
- 3 tablespoons olive oil
Creamy Seafood Casserole

Heat oven to 375° F. Heat 2 tablespoons of the oil in a large pot over medium heat
- 3 tablespoons plus 1/4 cup olive oil
- 1 large onion, chopped
- 1/2 pound medium carrots (about 4), halved lengthwise and thinly sliced
- 1/2 pound medium parsnips (about 4), halved lengthwise and thinly sliced
- 2 stalks celery, thinly sliced
- kosher salt and black pepper
- 2 tablespoons all-purpose flour
- 1/2 cup dry white wine
- 1 cup heavy cream
- 1/4 cup chopped fresh flat-leaf parsley
- 1 1/2 pounds waxy potatoes, peeled and quartered
- 12 ounces skinless tilapia fillets (about 3), cut into 1-inch pieces
- 1/2 pound peeled and deveined medium shrimp (about 18), tails removed
- 1/2 cup coarse fresh bread crumbs
Irish Lamb Stew

In a large bowl, season flour with salt and pepper
- 1/2 cup all-purpose flour
- Coarse salt and ground pepper
- 3 pounds boneless lamb stew meat (preferably shoulder), trimmed of excess fat and cut into 2-inch cubes
- 3 tablespoons canola oil
- 1 large onion, chopped
- 3/4 teaspoon dried thyme
- 1 1/2 cups dark beer
- 1 1/2 pounds medium new potatoes, peeled and quartered
- 1 pound carrots, peeled and cut 1/2 inch thick diagonally
- 3 tablespoons chopped fresh parsley
Mussels Marinara

1. Place a large pot (enamel-coated cast iron is great for this) over medium heat and warm
- Olive Oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- Red pepper flakes - to taste, but at least 1/2 tsp.
- 1 tsp dried basil
- 2 Tbs butter
- 1/2 cup white wine
- 1/2 cup chicken stock, plus addition if sauce becomes too thick
- 1 14oz can tomato sauce (Trader Joe's is the best - tomato without the 'tin')
- salt and pepper
- Mussels - Prince Edward Island are the best - 2 lbs.
- Pasta, your choice cooked to package directions at time of serving
- Parmesan cheese, if desired.

- 2 teaspoons balsamic vinegar
- 1 1/2 teaspoons granulated sugar
- 1 tablespoon dried basil
- 1 teaspoon dried parsley
- 1 teaspoon dried oregano
- 1 whole bay leaf
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 10 uncooked lasagna noodles, broken into approx. 2 inch pieces

Chipotle's Corn Salsa | How Sweet It Is

- 1 12-ounce bag of frozen sweet yellow corn, defrosted and drained
- 2 medium-sized jalapenos, seeded and chopped (leave in some seeds for more heat if desired)
- 1/2 red onion, finely chopped (about 1/3 cup)
- 3/4 cup fresh cilantro, torn or chopped
- the juice of 2 (juicy!) limes
