Dark Chocolate Stout Beer Cream Pie

Heat oven to 450°F. Make pie crust as directed on box for One-Crust Baked Shell, using 9-inch glass pie plate
- 1 Pillsbury® refrigerated pie crust, softened as directed on box
- 1 3/4 cups whole milk
- 1/2 cup stout beer
- 1 box (6-serving size) chocolate pudding and pie filling mix (not instant)
- 1 1/2 cups semisweet chocolate chips
- 1 1/2 cups whipping cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla

- 1 cup butter
- 1 cup Dr. Pepper cola
- 2 eggs
- 1/2 cup buttermilk
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 4 tablespoons cocoa
- 1 1/2 teaspoons cinnamon
- 2 cups flour
- 2 cups sugar
- 1/4 cup butter
- 3 tablespoons cocoa
- chopped nuts
- 1/4 cup Dr. Pepper cola
- 1 box powdered sugar
Chicken and Wild Rice Soup

In a large saucepan, sauté onion, carrots, and celery in butter until tender; add salt and pepper while cooking
- 1 large onion, chopped
- 4 carrots, chopped
- 2 celery ribs, chopped
- 1/4 cup butter
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup flour
- 8 cups chicken broth
- 3 cups whole-grain rice, cooked (To save time, Michelle uses two whole-grain rice microwavable pouches and cooks as directed before adding to slow-cooker)
- 2 cups cubed chicken breast
- 1 cup fat-free evaporated milk
Shrimp Penne (Alla Betsy from The Pioneer Woman)

Bring a pot of lightly salted water to a boil
- Salt
- 12 ounces penne pasta
- 8 ounces large shrimp
- 2 tablespoons butter
- 2 tablespoons olive oil
- 2 cloves garlic, finely chopped
- 1 small onion, finely chopped
- 1/2 cup white wine, optional
- Two 14.5-ounce cans tomato sauce
- 1 cup heavy cream
- 1/4 cup chopped fresh flat-leaf parsley
- 6 leaves fresh basil, cut in chiffonade
- Milk, for thinning
- Freshly ground black pepper
- Crusty French bread, for serving
MOM'S RAISED DOUGHNUTS

1. SOAK yeast in 1/2 cup warm (not hot) water - 5 minutes
- 1/2 c water, warm (not hot)
- 2 pkg active dry yeast
- 3/4 c milk, lukewarm
- 1/4 c sugar
- 1 tsp salt
- 4 c all-purpose flour, sifted
- 1/3 c shortening
- 2 eggs
- GLAZE
- 1 Tbsp water, warm (may need more to thin, but thicker is better)
- 1/2 tsp vanilla
- 1 c confectioners' sugar, sifted
Creamy Avocado Yogurt Dip

. It has a yogurt base making it a healthy alternative to sour cream-based dips and dressings
- 1 avocado
- 1 tablespoon lime juice
- 1/2 cup lowfat Greek yogurt (for directions to make your own, go to: www.theyummylife.recipes/167)
- 1 teaspoon honey
- 1/2 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground black pepper
- 1-4 tablespoons milk or buttermilk (for thinning, if necessary)
- Optional additional ingredients: chives, green onions, cilantro, cumin, cayenne, or minced jalapeno

- ¼-½ cup cup butter
- 1 package active dry yeast
- ¾ cup granulated sugar
- ¼ cup water (105 to 115 degrees F.)
- 5 ½-6 ½ cups all-purpose flour
- 1 teaspoon salt
- 1 dash freshly grated nutmeg
- 3 large eggs , lightly beaten
