Mustard Sauce Herb Crusted Pork Roast

1. In food processor, pulse bread slices till coarse crumbs (app 1/2 cup)
- 2 slices white bread
- 1/4 cup parsley
- 3 tbsp Parmesan cheese
- 2 tsp thyme
- 1 tsp smoked paprika
- 2 tbsp Dijon mustard
- 1 tsp horseradish
- 1/2 tsp crushed fennel seed
- 2 garlic cloves minced
- 3-4 pound pork roast, or tenderloin

Creamy Avocado Pasta

1. Bring water to a boil in a medium sized pot
- 6 ounces pasta, we used whole wheat spaghetti
- 1 large ripe Avocado, pitted and peel removed
- 1 tablespoon fresh lime juice
- 1 clove garlic, minced
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon kosher salt, or to taste
- Freshly ground black pepper, to taste
Chicken Roll-Ups

Set oven to 350°F. Spray a 9x13 dish with cooking spray
- 2 (8 ounce) cans Reduced Fat Pillsbury Refrigerated Crescent Dinner Rolls
- 1 (10 3/4 ounce) can 98% fat free cream of chicken soup, undiluted
- 3/4 cup grated cheddar cheese or swiss cheese (or any cheese of choice)
- 1/2 cup milk
- Filling
- 4 ounces cream cheese (very soft) * I used 1/3 less fat cream cheese*
- 2 tablespoons butter (very soft but not melted)
- 1/2-1 teaspoon garlic powder
- 1 tsp minced onion flakes
- 2 large cooked chicken breasts, finely chopped (or use about 2 cups, can use cooked turkey)
- 1/2-3/4 cup finely grated cheddar cheese
- 1/2 tsp seasoning salt
- 1/2 tsp ground black pepper (or to taste)
- 2 Tbsp. milk
- 1-2 cup grated cheddar cheese (for topping)
Mexican Roast Chicken and Carrots

1. In a small bowl, combine the EVOO, 2 tbsp

- 1 lemon, juiced
- 4 1/2 tsp. chili powder

- 1 1/2 lbs. baby carrots, halved lengthwise
- 16 cloves garlic, unpeeled
- 4 skin-on, bone-in chicken breast halves (12 oz. each)
- 8 cups shredded romaine lettuce
- 1 cup chopped cilantro

1. Line two baking sheets with parchment paper
- 1-1/2 cups plus 1 tablespoon all-purpose flour
- 1-1/4 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon freshly grated nutmeg
- 1 tablespoon unsweetened Dutch-process cocoa powder
- 1/4 pound (1 stick) unsalted butter, room temperature
- 1 tablespoon freshly grated peeled ginger
- 1/2 cup packed dark brown sugar
- 1/2 cup unsulfured molasses
- 1 teaspoon baking soda
- 1-1/2 teaspoons boiling water
- 7 ounces best-quality semisweet chocolate, cut into 1/4-inch chuncks
- 1/4 cup granulated sugar
Mozzarella, Tomato and Avocado Salad

1. In a large bowl, combine the tomatoes, mozzarella, basil and parsley
- 1 container cherry tomatoes, cut in half
- 1 carton fresh mozzarella cheese pearls, drained
- 1 avocado, peeled and diced
- 1/3 cup basil, julienned
- 2 tablespoons fresh parsley
- 1/4 cup lemon juice
- 1/4 cup olive oil
- salt and pepper
